Sichuan’s Vegetarian Hot and Sour Noodles

Ingredients:
Sweet potato glass noodles or fensi
Soup ingredients:
Tofu puffs - cut into pieces (or use minced meat)
Minced green onion (white part)
Minced ginger
Minced garlic
Chili bean paste - 2 tsp
Mushroom seasoning powder - 1 tsp
Chili oil - to taste
Green onion - (green part)
Water - enough to make soup base
Light soya sauce - to taste
Salt - to taste
Base seasonings for the noodle bowl ingredients:
Light soya sauce - 1 tbsp
Chinese black vinegar - 2 tbsp
Sichuan peppercorn oil - to taste
White pepper - a sprinkle
White sesame seeds - 2 tbsp
(Mix with a small amount of hot oil first to release the fragrant then add it to the bowl together with the oil or just replace it with sesame oil.)
Chili powder - optional
(Mix with a small amount of hot oil first to bring out the fragrant then add it to the bowl.)
Garnish ingredients:
Sichuan preserved vegetable (“Zha Cai”)
Fried peanuts
Green onion (green part) - chopped into pieces
Cilantro - chopped into pieces
Raw minced garlic
Methods:
1. Heat up a wok, add in oil, green onion (white part), ginger, garlic, tofu puffs, chili bean paste, mushroom seasoning powder, and fry until fragrant and red oil has released from the chili bean paste.
2. Add in chili oil, green onion pieces (green part), and mix well.
3. Add in enough water to make the noodle soup base and let it simmer.
4. In another pot, add in water and bring to a boil. Add in sweet potato glass noodles and cook until your desired tenderness. Soak glass noodles right away in room temperature water until they become transparent. Drain well.
5. Add cooked glass noodles to the pot of soup base prepared in Step 3.
6. To assemble, in a serving noodle soup bowl, add in all the base seasonings, (light soya sauce, Chinese black vinegar, Sichuan peppercorn oil, white pepper, and white sesame seeds and oil). Add the glass noodles and soup base, and top it off with all the garnish ingredients. Serve.

Fermented Red Bean Curd “Nam Yu” Deep Fried Baby Back Ribs

Ingredients:
Baby back ribs - 1 ½ kg
(Cut into bite-size pieces. Optional to marinate with ½ tsp baking soda first for about 10 minutes to tenderize the meat, wash and rinse well before adding other marinade ingredients.)
Marinade ingredients:
Fermented red bead curd “Nam Yu” - 1 cube
Fermented red bead curd “Nam Yu” sauce - 1 tbsp
Shaoxing wine - 1 tsp
Sugar or brown sugar - 1 tsp
Mushroom seasoning powder - ½ tsp (or replace with chicken bouillon powder)
Salt - to taste
Dark soya sauce - ½ tsp (for the color)
Deep frying ingredients:
All-purpose flour - 3 tbsp
Corn flour/starch - 2 tbsp
Garnish ingredient:
Parsley
Methods:
1. In a big bowl, add in all the marinade ingredients and mix well into a smooth paste.
2. Add in baby back ribs, and mix well. Set aside to marinate for about 30 minutes or longer.
3. After 30 minutes, add in all-purpose flour, corn flour, and mix well.
4. Heat up a wok of oil for deep frying. Add in baby back ribs and fry until golden brown.
5. Transfer to a plate lined with paper towels to soak up excess oil.
6. Return deep-fried baby back ribs back to the wok and briefly deep-fried them a second time and transfer to a serving plate lined with paper towels to soak up excess oil.
7. Garnish with parsley. Serve.

Beancurd Eggs Sweet Soup Dessert

Ingredients:
Raw Job’s Tears - a bowl (optional to pan fry it without oil before cooking to reduce the “cooling” effect or just mix in a bit of cooked Job’s Tears.)
(Soak them in water for at least 1 hour or more for them to cook faster.)
Dried beancurd skin - 2 sheets (or use dried beancurd sticks)
Ginkgo nuts - a bowl
(Remove shells, soak them in hot water to remove the skins, and remove the green stems from the inside by poking a bamboo stick through the ginkgo nuts from the top to the bottom to guide the green stems out or cut into halves and remove them.)
Rock sugar - a bowl
Cooked eggs - 8
(Cook them in a rice cooker with 4 layers of water-soaked paper towels layered on the bottom of the rice cooker and select rice cook mode.)
Methods:
1. In a pot of boiling water, add in job’s tears, ginkgo nuts, beancurd skins, rock sugar, bring to a boil, then switch to LOW heat and cook for about 1 hour.
2. After 1 hour and until all beancurd skins have melted, add in the cooked eggs. Serve.
