These Cranberry Shortbread Bars consist of two layers of buttery brown sugar shortbread sandwiched together with a homemade cranberry sauce. When you first make these bars you will notice a real contrast between the tartness of the cranberry filling and the crisp, buttery sweet shortbread. But after storing these Bars in the refrigerator for a couple of days, the sharpness of the cranberries softens and blends with the flavor of the shortbread. This is another great recipe to make during the Holiday Season.

Made these yesterday and, boy, are these delicious. I'm a big cranberry fan and just don't get to eat them often enough. This is my first cranberry dessert; it was easy to make. I was glad to have the video to refer to to help me gauge when the cranberry mixture was thick enough. The shortbread crust is buttery and works well with with the sweet/tart cranberry mixture. I used an 8 inch square pan and that worked just fine. Love it. Another keeper. Thank you, Joy!

I've always disliked cranberry sauce & the whole berry sauce. A couple years ago I decided to make my own homemade. Love the homemade! I know I will love these bars. My plan is to make them for our family gathering Saturday. thanks for sharing.

Fantastic Stephanie, I use to live in Westport, WA, which is right next to Aberdeen, WA, which is home to Ocean Spray. They have Cranberry bogs everywhere, they are so beautiful! To see those bright beautiful berries in their bogs, all floating on top bursting with color, it’s absolutely beautiful and spectacular, I didn’t know before moving there that the ocean fog actually helps in their tartness, taste and growth.

Hi Stephanie... These really look very nice (like small pieces of tart or pie) and flexible. I don't have cranberries, but might try with our popular Guava marmalade. Here in Brazil we have a very popular cookie witch looks like a thick 'tuille' cookie rolled with a filling of this guava jam. I think it will work nice...i'll make them and let you know. It might also work nice with our banana jam with pieces and caramelized sugar.

I noticed you had a thermometer in your oven--do you go by the temperature on the inside thermometer, and do you find there's a considerable variance between the reading and the temperature you set?
+shartanne yes every oven I’ve used is off a bit. I recommend an oven thermometer and going by it rather than the oven setting.

I've never tried it, but you should be able to cover it with fondant.

Yes, if using frozen cranberries, the process is the same.
Can I use the same filling for Tarts if I want to make Cranberry Tarts?
I've never tried that, but it sounds like a good idea.

I just made these and the bottom layer stayed soggy almost like it was not cooked, even though I baked it for 18 min. I decided to leave it in the oven longer after the jam and topping were added thinking maybe it was the glass dish, but then I read shortbread hardens after baking. Is this true, or did I go wrong somewhere?
As you saw in the video, I used a metal baking pan. If you used a glass pan, glass conducts heat differently, so the baking times will be different. You will have to go by how the shortbread looks, not the baking times I gave. So when baking the bottom layer, you want to bake the shortbread until it becomes lightly brown on top and set. Then spread the baked shortbread with the filling and the rest of the shortbread, and then bake until the top is golden brown.

You could use the blueberry pie filling if it's the same thickness as the cranberry filling I used.

I am using the SYLT Lingon Berry Jam of Ikea to do them= excellent result and you have this jam in Denmark!

If your cranberry sauce is thick like jam, then you could use it in these bars.

Stephanie, are you baking in a fan assisted oven?
Yes, I use a convection (fan) oven. If you are using a fan oven, then reduce the oven temperature given in the recipe by 25F (15C).

Yes, you can use jam instead of the cranberry sauce.

I wondered about that too. Dried cranberries are inexpensive and readily available.
May l know the texture of this shortbread? It is crumbly? I wanna make it for my little boy so he can hold it. But if its too crumbly he wont be able to hold it
It is a little crumbly, but I don't find it falls apart.

Mine batter came out so creamy no where near clumpy 😭
Was your butter a little too soft, as that would cause the batter to be creamy. However it should still work.
My hubby doesnt like cranberries so I was thinking an apple cinnamon filling cooked down 1st as an alternative..

That sounds delicious. You could also use a jam, I often use raspberry jam.
