I know this is a late reply but you shouldn't. For these cotton/chiffon/sponge cakes, using oil makes the cake softer, lighter, especially when you can't eat it all at once and you have to store it in refridgerator, oil keeps the cake soft while butter in cold environment will condense, resulting in hard-rock cake and totally destroy the texture.

Hi,cake flour is more delicate than all purpose flour. can try to make, for every 1 cup of all purpose flour remove 2 Tbsp of flour,and replace 2 Tbsp of that with cornstarch

It should be a problem with the water bath .You can put it back in the oven and bake it for 5-10 minutes without water bath
