My method includes punching pulp top to bottom twice a day (as he does at fourth day) to keep the pulp wet during open fermentation.

Mex.
Well..it sure made me give up wine! That is some nasty looking crap guys!! At least you didn't crush the grapes with your feet!! 😂 Thanks for the video!
Well...Georgia might be a craddle of wine making and all..... and I would be intrigued to taste it.... but I am not sure I would enjoy this wine and here is why: - grapes are stored in plastic bags before crushing. What ?????? letting grapes sit in the plastic bags before crushing boost growth of all sorts of micro organisms in the warm and humid conditions. Bad idea. Period. - also it promotes oxidation which will induce reductive notes and brown pigment to the wine - Since I did not see any cultivated yeast innoculation, I would guess these guys are letting the indeginous yeast to take over. It might me a great idea in places like Georgia, or it might not. The problem is, you never know what yeast strain will take over, so the result unpredictable. - in addition to that these guys must be working with best grapes in the world (which I doubt) because they make no sugar nor acid adjustment. - Next .... Whole cluster fementation. Intersting. But I don`t really inderstand why they are doing it. It will definitely promote tannins and herbal taste, which is not necesserily what one is looking for in the white wine. (green stemps arghhhh) - then they let it sit on skins which is ok for orange wine (and stems, what????) for some two weeks and a half. Sort of extended maceration. Usually this techniques is used for red wines to apease the tannins. So, not completely fool but still I am not convinced because extended maceration needs little bit more time to smooth the harshness.
You are a professional winemaker, I guess. Old, Georgian methods work well enough if you use old, traditional oaken casks or big underground earthenware "pots" we call "kvevri" , which host quite a predictable sort of yeasts, even when they are rinsed thoroughly ( believe me it is a backbreaking work if you have not got the luxury of tap water :D ) .When you pick your grapes at your own vineyard and immediately press them , bacterial contamination is not a concern. Adjustment for acidity is some years quite a problematic issue, especially when you do not posses special tools and KNOWLEDGE .. but believe me, in most households in eastern Georgia you will not be disappointed with homemade wines. At countryside, of course

I liked the way you processed the grapes but I had to give you a thumbs down because it does not show the finale results. This is not the complete way you make wine. Sorry.
~ Evidently you've never made big batches of wine. Taking the stems off of a big batch would take hours to do, and besides, the stems don't add enough bitterness for most people to notice. In fact, some bitterness is desirable. I make pear wine and I grind the pears, seeds, stems, and all, and over the years I've had a number of people tell me that it's some of the best wine they ever tasted. I grind all big fruit in a big meat grinder with the biggest open blade (i.e. two large oval openings). I pulse grind berries in a blender (barely breaking the fruit). I never boil any fruit or add boiling water to it as my experience has been that by doing that very often the wine won't clear. I usually follow Jack Keller's recipes to a T (his website address is: winemaking.jackkeller.net), except when it comes to his advice to boil fruit or add boiling water. I do it cold. It may take a couple of months longer for the wine to work off, but it tastes better (in my opinion) and it usually clears by itself (without having to add fining agents like bentonite or diatomaceous earth).

Please consider the possibility that the Bible is true and genuinely open your heart to Jesus Christ. Break down before him in prayer, bare your soul, and ask for forgiveness. Read at least Genesis Mathew and one book you chose yourself. As you do please remember to put Jesus Christ’s lessons into practice in your own life. Start with forgiveness. Work though some of that inner baggage we all build up with our parents. Please, it is super important.

Well...Georgia might be a craddle of wine making and all..... and I would be intrigued to taste it.... but I am not sure I would enjoy this wine and here is why:
- grapes are stored in plastic bags before crushing. What ?????? letting grapes sit in the plastic bags before crushing boost growth of all sorts of micro organisms in the warm and humid conditions. Bad idea. Period.
- also it promotes oxidation which will induce reductive notes and brown pigment to the wine
- Since I did not see any cultivated yeast innoculation, I would guess these guys are letting the indeginous yeast to take over.
(green stemps arghhhh)
- then they let it sit on skins which is ok for orange wine (and stems, what????) for some two weeks and a half.
One more word, they may be not working with the best KNOWN grapes in the world

no :)
Good, but incomplete, could have shown all steps upto glass
Can you consume in front of us ?
19 day fermentation on the skins & stems? Unusual; a slow-maturing white, I'm guessing. I wonder what variety?
Why do say it's unusual? I think it's rkatsiteli grapes
You could be right, cos Georgians only been making wines for 5,000 years.
It's not distilled?
Whine no

Like!
Just white grapes ? You can't make this way with red grapes?
Of course it is possible
I liked the way you processed the grapes but I had to give you a thumbs down because it does not show the finale results. This is not the complete way you make wine. Sorry.
Final result after two months, with low temperatures wine will be stay clear and ready for use.
@Jacob Brickey either way works. If you add yeast, you control the process and get more consistent results, but natural yeast is everywhere.
Makho Kvatashidze where is the yeast ? where is the sugar?.
Leaving in all the stems adds a bitter taste remove the stems first. If you take the finished wine run it through a still an you have grappa
It may take a couple of months longer for the wine to work off, but it tastes better (in my opinion) and it usually clears by itself (without having to add fining agents like bentonite or diatomaceous earth).
es bueno aprender
Ne yaptıklarını sorabilirmiyim.

ruclips.net/video/KnjaBqdv5WM/видео.html
There's a lot of oxygen in the process when it shouldn't. No wonder the liquid looks like that. I wonder if the wine it would be any "good".
Process without oxygen is after. First fermentation need oxygen.
First is maceration on pomace by ancient Kakheti method. Than is classical fermentation.

ru.wikipedia.org/wiki/%D0%9A%D0%B2%D0%B5%D0%B2%D1%80%D0%B8
