    1 celery
    1 carrot
    1 onion
    One can of tomato sauce
    Salt, pepper, oil, parsley
    2 eggs
    How to make it:
    Finely dice one celery, one carrot, and one onion.
    In a large enough pan, add two tablespoons of oil and a handful of your favorite vegetables. I use mushrooms, but really anything is fine: peas, eggplant, zucchini, or bell peppers, for example.
    Brown everything for 3 minutes.
    Add a small can of tomato sauce, a glass of water, salt, pepper, parsley, oregano.
    Cover and cook slowly for 30 minutes.
    Remove the lid and make room in the sauce for 2 eggs.
    Add the eggs and put the lid back on for a few minutes until you can see the white of the egg.
    Put the vegetables in the bread, or the bread in the vegetables, or the bread in the egg, whatever you want, but enjoy the moment!
