Hi, if you want to make two smaller loaves you have to bake it for 30 minutes at 200°C (390°F) I always recommend using a strong flour with lots of protein.

A tip for you from a baker. Use a banneton and then turn the loaf out onto parchment paper and score - Then use the parchment to lower the dough into your Le Creuset / cloche. This approach does two things. The bottom of the loaf becomes the top. Whilst proofing the upper part of the dough expanded more because it did not have the pressure of more dough above it. The bottom of the loaf then becomes the top in the oven. Now that too is not under so much pressure it it can expand more evenly. You will end up with a much better crumb. You won't get the more open crumb at the top like in your bake. Scoring is much easier too. For all of that and the weird rolling method, you made a lovely loaf. Love your video. You list instant yeast but say brewers yeast in your video. Just curious, will it make a difference? I don't have brewers yeast but can find some if it makes a difference.
Brewer's yeast is sometimes called instant when it is dry
Not active yeast? Seems odd since you are leaving the dough overnight.
I think in some European countries, ?Italy, they still refer to beer yeast because traditionally that was what was used. Never use a beer, or wine yeast, for bread the yeast is wholly different and no good for bread.
@@joefelice5062 Active yeast is an older way of drying yeast. The method causes 20% of the yeast to die. Dead yeast is high in glutathione this weakens the gluten. Much better to use the more modern instant yeast. The varieties of yeasts in Fresh, instant and Active yeast are all the same. The overnight in the fridge is to allow the slower flavour producing reactions to take place. Flavour is brewed into bread and fast fermentation times always gives poorer flavoured bread. I hope this is helpful.
