i like to mix 1-2 tbsps of whole yogurt with water and lemon just to make it more liquidy so that when you start to blend it with the beans and tahini and olive oil, it’s not dry and starts to become the right consistency. love the chef hat!
Hahah I used to make homemade hummus at an old job. I have a love/hate relationship with it now. It was super easy but always annoying. When in doubt just keep adding olive oil or some type of liquid until it’s smooth lol. The tahini always clogs up the blades.
I imagine the original creators of Hummus were equally puzzled the first time they attempted to make it. They would be looking over a big pot of paste and being like: " this needs more olive oil just add more olive oil whats the worst that could happen? There are more terrible things in the world..."
tahini should be a liquid. if it has solidified and there is liquid separation (not oil collecting at the top, that's normal) then it isn't good anymore.
