In the video of this for the front legs, you switch your color on row 5 but on the written pattern, you finish row 6-9 with the white yarn, fasten off, and then switch colors. so I am confused.

In both the video and the written pattern the yarn color needs to be switched after round five to make rounds 6-9 with the new color.
