@billbryant1288 - good for you - and congrats, you will make wonderful food on that! speaking of offsets... I had 5 Langs, 3 custom made ones. Fun, but starting at 1am was grueling. I also realized with the reverse flow - it is brilliant, but it is also drying out the food with all that air blowing over it and straight out the pipe. I stumbled on a used Ole Hickory Pits SSE on a trailer. It was a dream - I painted the trailer, cleaned up the pit - I was downtown Lee Roy Brown. I started cooking in it - and I realized the secret. OHP keeps all the moisture in with the vents at almost the floor of the pit, so all the moisture stays on the meat - and the exhaust is only the coolest smoke - if I am making any sense. So not only was I able to be putting meat and a few fireplace sized logs that big rig in at 6pm-8pm 225 the night before... going to bed and checking like 12-4pm for it to be ready, then turn it down to 150 and shut off the fans, but the food was incredibly moist - crusty and barky, but moist inside. I also got my life back. Every cook we did just about. Cindy and I would get it prepped on the table, season, throw it in the OHP (they all work the same), then get in the hot tub - knowing we didn't have to worry about it - and didn't have to get up at 1am to start splitting wood, making a fire and babysitting it. We got our life back with an Ole Hickory Pits smoker.

I want to go back into BBQ... but especially for BEEF JERKY. I will be 70 next month... and do not want to retire... Why would I want to do that??? BAHAHA
@judichristopher4604 - I didn't have that kind of money when I got my first one either - so I found a great used one for like 3K (the price of a pellet smoker - which are NAT AT ALL in the same category as this machine). Look on Marketplace and craig's list for a good used one and grab it. Ole Hickory Pits still sells all the parts for all the older machines -- and they really never break (no computers - just real parts that are durable). I bet you find a good used one for 3k, then buy another later. Go for it - if you are looking to make real BBQ, you will be in love with this machine.

It worked fine, but this smoker takes it to a whole new level! Looking forward to seeing it (and you) in action... Will they ship overseas? Like say, to the Philippines? Or Dubai maybe? Question about the physical placement of the smoker. How far away from the house should you cook with the smoker? I assume if you cook with the smoker up close to your house it may permeate the house with smoke? Or maybe it should be far away in case of some type of grease fire? How many feet from the house do your recommend?
@jasonstein5179 - good questions. I am not competent to answer those questions, but I know the firebox is heavy gauge, thick steel and the smoking chamber are separated from each other by channels, so the chamber stays smoky and moisture stays in. We also have a nice breeze from the southwest, so almost always the smoke is directed away from the house. But I will yield my answers to someone who knows that the UL specs are regarding spacing from combustibles.

Brad, love your videos. One day we will meet up. Your a hard working man, I'm not joking. And you make great money doing what you do. But some of us can't afford those expensive smokers. I would take a off set stick burner anyday. Those pellet smokes need electric to work. My Oklahoma Joe Highland smoker just takes wood and time. I have sat in my garage on a Rainey morning and day, with my smoker barely outside. But I say there for almost 18 hours smoking two large briskets. And they came out very juicy and tender. Plus I have smoked four slabs of pork ribs for 4 hours, then got my cherry pie out of the frig and put it in my smoker with cherry wood for about 2 hours. And my room mate was shocked with the taste of her cherry birthday pie. Myself I'm on social security. I would not change a thing with my smoker and all my tools that I use. But keep up the great work that you do. And also I want to wish you and your family a Happy New Year.

you need to have water in the bottom of the CTO IMHO. And the new fan and design has plenty of air flow. Again, IMO.
