    I used to be an exterminator and have been in hundreds of KFCs. They do it entirely different now. They used to have a circular grinder from Hobart to get the precise size. And they marinated it for 12 hours before selling it. They stored it upside down so when they sold one it turned rightside up and was thoroughly moist. It’s all packaged now. They stopped selling most of their staples like potato salad, corn, baked beans, chicken livers. They kinda suck now.

    I worked for KFC back in the day when we used to make everything from scratch... EVERYTHING! And back then it tasted wayyyy better then it does now! They went from making things from scratch to opening a large carton of already made cole slaw, potato salad, baked beans, etc. Just like any restaurant, when you start cutting corners the quality goes down hill!

    I used to work at KFC, if the slaw is dry, that usually means it was made that day, & didn't have time to marinate. Yours looks great 😋.

    I remember Col. Sanders being interviewed on the Johnny Carson show after he had sold most of his restaurants many years ago. He complained that they were no longer using Miracle Whip in the cole slaw. That being said, the recipes are always changing.

      @@kgreg1956 they’re not. Over the space of a few years I’ve tried KFC original crust. Has no taste whatsoever. And the last meal I got it was slightly crispy as if deep fried instead of the pressure cooking they used to do. If I wanted plain chicken, without the spices, I would have headed to any of the other 362574 chicken places that’s cropped up everywhere close by. Fried in peanut oil with salt/pepper in the flour is about all that anyone does now. KFC has cut so much of their original flavors and cooking processes that they no longer stand out from the crowd. I won’t eat there any longer. Still overpriced for what’s now a mediocre product. BTW, I tried their meals in different towns to make sure it wasn’t just the local franchise that cut back.

    I use Miracle Whip, sugar, lemon juice, salt and pepper and a bit of grated onion in my homemade coleslaw. We like it.

    The secret is onion juice. You can duplicate easily. The tang is the onion juice. I cheat, buy Cole slaw dressing from hidden valley and add onion juice. Yummy

      Chris 82 grate the onion, it will be liquidy, you can then squeeze it to get the liquid or use it like that. Using food processor or stick blender will also render juice. Hope this helps.

    You are so right, they have changed it.. and because of that, i rather Churches Fried Chicken Coleslaw.. they used to have enough black pepper you could see it, and it did have a good twang back in the day.. it doesn't any more.. and no black pepper.. when mom makes her home made coleslaw, its miracle whip sugar and vinegar.. maybe you could do Churches Coleslaw next? yum!!

    Here's a tip folks...
    When making slaw, soak your finely chopped onion in vinegar for 5 minutes. Then drain and dump.
    It takes the harsh onion flavor out.
    I also use mayo.

      We want the onion flavor, use a good white onion, finely chopped. The colonel used miracle whip which I hate the stuff, but... That's how it is.

    I worked at KFC when I was 17 yrs old back in 1967. You say they used miracle whip, I remember it was mayo. I was the guy who chopped the cabbage and carrots. Then mixed the ingredients. I use to dump the dressing on top of the slaw, they used 55 gal plastic cans and then put them in the cooler overnight.

    Think KFC cole sIaw changed some or it's our taste buds. They do change as we age. I personally don't like miracle whip. I just make my own. I use mayo, sour cream, a lil vinegar, sugar, salt. When I serve mine I add a bit of olive oil. All to my own measurements cause I make different amounts all the time.. As i make it I taste it along the way. It's really delicious to me lol.     As others mention, I definitely detect horseradish in KFC's coleslaw. I would look at Marzetti's slaw dressing as a starting point for the glop to use. It seems to have a tanginess similar to what distinguishes Miracle Whip from mayonaisse (pretty sure that's just vinegar.) The challenge for me is being convinced that soybean oil is inherently evil, so nothing off the shelf -- even KFC's coleslaw -- is quite healthy enough for me. (Soybean oil is invariably GMO, and contains phytoestrogens which can mess with humans hormonally.) To lose the orange tinge, perhaps soaking the grated carrots overnight, in water, would help.

    Thanks. I just used miracle whip, sugar, black pepper and white vinegar for the dressing. I didn't use much shredded carrots and chopped up the cabbage. I didn't use any onion at all. Maybe I will try a bit of onion another time but without the onion, it came out very well. I'm pleased. I've made it twice already and plan to make it soon for a family funeral lunch. I have made many attempts in the past and was never totally happy with recipes I've tried. Unfortunately I don't have an exact recipe yet. I just went by taste and was careful with the amounts of the ingredients to make sure I didn't add too much of any ingredient until it came out right. You can make it as moist or dry as you like. Mine tends towards moist but I don't overdo the miracle whip either.

    mine is cabbage carrot onion miracle whip vinegar sugar and drop of cajun seasoning / marinate refig for about 2 hours . stir occasionally .

    Actually the closest recipe I have ever seen to the current KFC is on Shotgun Red’s channel. That is the version I make and I love it. I’ll be glad to try this one though!

    I remember the slaw was chopped real fine. I put my hand cut 1 inch cubes of cabbage, in a blender and chop it in water. Watch close you dont want it turned to mush. Drain the water off and then make the slaw. I think the reason it was darker, you used to many carrots. I believe they used a little water to thin it. You can chop the carrots the same way, just don't chop together. That is 1 of the things I liked about the slaw, it was chopped so little. Another thing I liked the sweetness of it.

    A friend of my husband's used to work at KFC before they went all premade/prepreped/prepackaged. She used to make the slaw. She said pickle juice and apple cider vinegar. I use pickle juice and sweet relish, half mayo half miracle whip. When we lived in VA we opted for Hardee's, some Hardee's do chicken like KFC and its really good. Their slaw is better IMO. But in NC the Hardee's don't do chicken, at least in our area. So everyone asks for Bojangles. And YES YES YES KFC chicken has gotten so much saltier.
    Manufactures blanch the carrots prior to adding them to mac salad, potato salad and slaw so it doesn't 'bleed'.

    KFC coleslaw used to be my absolute fave! I don't like my slaw too creamy, and I prefer the vinegar tanginess. This is interesting to me because I think Miracle Whip is disgusting. I guess the vinegar and sugar mask the taste of it.

      The only Cole slaw I ever liked was KFC but that was many years ago .I think they used a mixture of Mayo and buttermilk and it wasn't very sweet or salty .I found a receipe on Shotgun Reds channel ,I'm going to try .Its supposed to be like KFC'S old Cole slaw .The only change I'm going to make is half the sugars and add some buttermilk.I to despise Miracle Whip.

    Back in the sixties we made our coleslaw entirely from scratch in a plastic trash can and a large wooden spoon. Their dressing was always package add one bag syrup like. I would add a half of bag extra. Seems to draw the customers more doing my shift, i felt. Loved that job.

    KFCs are probably different. Back in the day, before it was KFC, the coleslaw in Houston, Texas had horseradish. Not a ton but enough to tell it was there.

    Mt Mom ALWAYS used KRAFT MAYONNAISE, RED CIDER VINEGAR, BLACK PEPPER, PINCH OF SALT, SUGAR TO SWEETEN THE DRESSING. SHE NEVER MEASURED THE CARROT. SHE ONLY ADDED ENOUGH TO BRING OUT THE COLOR OF THE CABBAGE LIKE KFC'S. SHE GRATED IT OVER THE BOWL OF CABBAGE BEFORE DRESSING WAS ADDED. THE CARROT WILL MAKE IT SWEETER AND CHANGE THE TASTE OF THE CABBAGE.

    Colonel Sanders once said after selling to KFC, they changed his recipes and he refused to eat it. Yes, back in the 70's KFC was KING. But now, so much unknown ingredients in it, the taste is aweful.

    I haven't made this slaw or been to KFC in ages. But I remember making the coleslaw with Tarragon Vinegar and it was pretty darn close.

      This! Heinz makes one. If you can't find it, you can put dried tarragon (tbsp per 1/4 cupish) in white vinegar, then heat it in the microwave for 30 seconds and strain. You can use bagged cole slaw, but chop it with a knife until it's a finer size. Add mayo, grated onion, white vinegar and sugar. Super close to what's at KFC!

    The recipe I use and love is only Mayo, sugar, and Heinz Taragon infused vinegar, I don't measure anything I do it by eye and make sure to mix as much sugar to the mayo til it tastes sweet

    I haven't eaten KFC in sooo- long but yeah that does look dry compared to what I remember. I tried imitating their coleslaw too and figured putting a whole carrot would make the orange color really strong. I would recommend putting half a carrot in order to get that color of KFC coleslaw

    I worked at a KFC back when I was in high school a couple decades ago. I remember making big tubs of the coleslaw. I dont know what the sauce ingredients were but it was a big premixed bag of a light yellowish tan syrup. It had a thick consistency. When everything was mixed well the color of the coleslaw was still that pale whiteish color.

    Great video.
    I love coleslaw or really anything with cabbage. I really like cabbage any way cabbage can come, cooked, raw, coleslaw, salads, cabbage rolls, cabbage and corned beef, every way it comes. It's my favorite.
    There is a KFC near where I live. You can guess I go there just for the coleslaw.
    Now I'm going to try this recipe!

    My 72 year old father told me KFC went down the drain after the Colonel passed in the 80’s, while he was alive my father said KFC had the best fried chicken ever! Today taste nothing like it used to! I’m not surprised all products from there have changed.

    I used to work at KFC in 1984-5. We did used a giant Hobart grinder/shredder for all of the vegs so they were all the same size. They did store upside down so it would be wet the next day. Also, I didn't like onions back then so when I made the mac and potato salad I would leave it out! We really miss the old KFC it is terrible now.

    Don't limit your self to the same old same old OK ! There other thing you can add if you wish ! Like shredded Coconuts, bacon bits, Pineapples ALL 3 of these is EXCELLENT in coleslaw! Even sliced up peppers YUMMY

    Yep. Sugar is the secret. Same as Secret Sauce on Big Mac. To me, miracle whip equals sugar. I usually don't like sweet stuff, but adore the old KFC slaw. I found a brand in the grocery store that tastes at least as good as, to my memory. It's called Reser's. Y'all can read the ingredients yourselves 😁

    I like the KFC coleslaw because it's sweeter than any other coleslaw I've tried. I can usually taste pickle juice or vinegar when I buy it from other places & I'm not a fan of that. I will try following your recipe & tips to make KFC coleslaw. Thanks for the recipe 😊

    I always make my own coleslaw. I add just a tad bit of horse radish in it. It adds a different taste to it, but it's really good that way. Also just a little mustard too, and sugar, just a tad bit of whole milk too. The milk thins it out just a little. I've never tried to add pineapple to it. I might try that next time I make it.

    Oh boy, now I want some KFC! I made one of your kfc cole slaw and it was great. The next time I made it I had to adjust the whole thing over and over because of the onion!
    And sugar.
    And KFC in my town changed the original recipe for the chicken and it sucked! I don't go to that one anymore! Love your recipes. You have got talent!

      Last 4 times I’ve eaten KFC it was in different towns 3 of those times. I ordered original recipe and there were no spices in the chicken. Also it used to be pressured cooked and last meal I got was deep fried. Overpriced for mediocre flavor.

    It depends on the KFC you go to. I was in North Carolina and ate at the KFC close to Fort Bragg, let tell you that was the best coleslaw I had ever eaten!! I’ve been chasing the dragon ever since lol

    I just ate KFC last night and it's still delicious. The chicken is more salty. The coleslaw sometimes its more drier than other times.. I had that happen.. But what you liked as a kid you might not like it now. What you like as an adult you didn't like as a kid. Your taste buds change. I can't wait to make your recipe.

    I haven't been in a KFC forever, but I do think what you got was really dry compared to what it always used to be. I don't know if mine is similar or not but it's what I like and that's what matters. I can't give ratios because I don't measure and I use mayonnaise because I won't buy miracle whip for anything LOL but I use mayonnaise, red wine vinegar, a little dash of salt, sugar, a tiny splash of milk, and a little bit of creamy horseradish sauce. I actually mixed the sugar in with the mayonnaise and the vinegar so it sort of mixes it well and causes the sugar to not be grainy. I think you do have a lot more carrot than KFC had from the part that you showed but to me more carrot is a good thing.

    The liquidy part of the cole slaw I believe depends on who dishes it out into the containers. There have been times I've had to drain theirs and times I have to add mayonnaise.
    I'm guessing the reason your's is more orange is that you used more carrot and in bigger pieces than their's. I think I''d prefer your's as well.
    My husband, who's older than me, thinks mine taste more like their's use to taste. I think it's because I add a bit of crushed pineapple and a bit of the juice instead of adding sugar, and I use regular mayonnaise... Just sharing

    Take an onion and grate it on the small cheese grater side. Do it over a bowl, pour pulp and liquid into salad.

    My grandma used to make the best coleslaw it was peppery and she used honey in hers....that’s all I remember 🥰. She passed and never got her recipe...KFC is the closest...I know she only used real mayonnaise for everything...I hate miracle whip with a passion 😂

    maybe shred then soak the carrots in cold water in the fridge for a lil bit?
    carrots without the orange tinge?
    or use the marinade soak the cabbage and carrots separately then strain the carrots to add to the slaw after you marinate?

    When I was young I used to work for kfc. The recipe hasn’t changed since I worked there. It varies from person to person on who makes it that day. Some employees would add more miracle than others and some salt to draw out the moisture of the cabbage. But again it varies. And they don’t put vinegar in it. The sugar is the one ingredient most of us would add more to counter the salt added to draw out the moisture.

      Miracle whip has vinegar in it. You can add vinegar and sugar to regular mayo to mimic the flavor.

    We quit getting KFC long ago their chicken has changed their coleslaw definitely has changed I make coleslaw at home I use mayonnaise a tablespoon of apple cider and 1 to 2 tablespoons of sugar I've not gotten the complaint yet I put all the other stuff as you do my daughter-in-law did yours it was good it came in between KFC and mine which she loves all and as always thank you

    I like mine best! LOL I use cabbage, carrots, Hellmans mayo, cane sugar and fresh 🍋 lemon juice. My 88 year old mom loves it.

    Yes, I do remember the coleslaw from KFC was a bit soupie but now it changed and it doesn't taste the same as a few years ago. Who knows, maybe as we age, out taste buds changed to. Thanks for the recipe and I'll make it soon.

    I agree, KFC chicken is too salty. I live in CA and the chicken is very salty and the coleslaw is also too sweet. I believe the vinegar KFC lists is included in the ingredients of Miracle Whip. I also agree with your conclusion at the end, you can recreate a better version coleslaw recipe. I love coleslaw! The quality of your cooking videos is excellent! The content and narrative are why I follow your channel. Keep posting, it won’t be long before you reach 1.5 mil followers.

    Probably with the miracle whip (which is tart with vinegar) you wouldn't even need the cider vinegar. I'm going to try because this is actually dairy free too! Thank you

    You’re right…it used to be more liquid with a perfect balance of sweet and tangy. They used to have the best biscuits too. I tried it recently and was sorely disappointed because the food did not taste anything close to what I remember. I also tried the infamous honey bbq wings and nothing like from the 90s. I instantly regretted the purchase.

    I remember the KFC coleslaw as being VERY “wet and liquify” too. It’s been years since I’ve eaten KFC. I wonder if they’ve altered their coleslaw recipe??

    You are not wrong about the chicken being too salty and it sometimes burns my tongue as it seems to have more spice that I use to notice. They do not put as many carrots (thank goodness) in their slaw and sometimes it does not have enough sweetness for me. They say your taste in foods change every 7 years, maybe that is what is wrong you and I. By the way I bought your cookbook and I love it. I wish every one of your RUclips videos was in it.

    You are totally correct. KFC’s coleslaw was one of my favorite sides growing up. It used to be much “wetter”, plenty of mayo liquid dressing. Also it was not overly sweet. I remember a more savory/salty flavor. I am sure some high salaried young “suite” executive decided they knew better and forced a change. Or maybe the younger generation craves sweet or savory so KFC adjusted it. Who knows???

    Have chopped carrots in water for a few minutes and drain. The color gets washed out and your salad will have less yellow tone

    I used to LOOOOVE KFC slaw back in the day. It was the best slaw ever. About 7 or 8 years ago, they changed their cole slaw recipe. Some say it is no longer made in the restaurant. I agree with you, it used to be less sweet and definitely more liquid. One thing I noticed about yours, is that there seemed to be much more carrot in yours, than theirs so maybe that's where the orange color difference came from.

    I loved there coleslaw and hush puppies. Together they made a great meal. I thought I was the only person that liked KFC coleslaw. My wife eats it and says it's okay. I always tell her to give me hers. I love it that much.

    Your Absolutely right because I see your coleslaw and yours look like the very first cow-slaw I remember when I was little my childhood and the coleslaw they use now they probably cut off the vinegar and added more sugar so I think you hit it just right on the thumb
