February 2023 trip to Sandals South Coast in Jamaica. We went on 9 scuba dives, and this is a compilation of some of the footage we got. Lots of beautiful corals, fish, and other aquatic life.

I am AOW, just curious how the booking to go on dives work, is there shore AND boat dives available?

Congrats and thanks! It might be a little different at different locations, but I can speak for South Coast in February.
The dive shop was open until 4pm and you had to sign up for dives the day before. You could only sign up 1 day ahead and 1 slot. The first time you'll need to sign waivers and provide certifications. If you have DAN insurance they can file that too. We never were turned down for it being too full, though one day she had to "squeeze us in" and the boat was very full the next day. Most days there were 20 some divers, up to 30 some. We dove 5 days total. You can't dive within 24 hours of either of your flights. Make sure to bring your log book, I believe if your last dive wasn't within 12 months they require you to pay for a refresher.
The included dives were on a boat that loaded up about 8am every morning and left the dock around 8:30-9. It's island time so don't be in a rush. 🙃 We only had boat dives there, but other Sandals might offer shore dives. You get 2 tanks for 2 dives, one was around 60 feet and one around 25-30. The boat picked us up and moved us to the different dive site in between dives.
I believe you could request deeper dives at this 8am time slot as well, but we didn't have our deep dive cert yet when we went. Most of our dives were about 45 minutes, and the boat time from dock to site was from about 5-20ish minutes. There were usually 3 groups of about 6-12 divers teamed up with a Sandals guide. Most people had a buddy but they allowed solo divers as well. Each group got dropped off at a slightly different location. The boat got back around noon. You could also pay for private or specialty dives that went in the afternoon.
None of the restaurants opened before 7:30, so we would grab a light breakfast from the buffet. Then they had light snacks like sandwiches, fruit, muffins, juice, and water on the dive boat.
