I'd love to see some retro ones. It seems that (either through the FCC or FDA), cereal companies aren't allowed to create that many commercials.
I was thinking that some characters missing are Trix the Rabbit, Count Chocula, (and digging further back to when those commercials were more commonplace), Wendell from Cinnamon Toast Crunch, the "Dig'um" frog from Sugar Smacks, the bear from Golden Crisps, that dog from the Cookie Crisp commercials, and... a very famous trio (I think that there's a paneled advertisement with them in an old issue of "Whiz Comics" that I found), Snap, Crackle, and Pop.

Sugar Bear (Golden Crisp Cereal), Trix the Rabbit (Trix Cereal), Snap, Crackle & Pop (Rice Krispies), Three Chefs (Cinnamon, Toast & Crunch), Coco The Monkey (Cocoa Krispies) & Dig'em Frog (Honey Smacks) I'm pretty sure there are more that you remember but most of Kellogg's had a lot of the Hanna Barbera characters doing ads for their cereals but still really neat. I would love to see Warner Bros. (who owns Hanna Barbera characters) to come up with a new Cereal for them. I would love to eat some Pic-a-nic Baskets shaped marshmallows. I like the Trix Rabbit and always wanted the kids to just let him eat his cereal. Also Cookie Crisp has had like half a dozen different mascots - a wizard who makes cookie cereal just because he's trying to be silly, a robber trying to steal it with the help of his dog as a policeman chases them down, a husky with the same name as the crook's dog just buying it in a store, a naked wolf again with the same name trying to steal it from kids with Wile E. Coyote inspired machinery...

I also think a good cereal character you should do is the Trix rabbit are the Golden Honey smacks frog or the Tasmanian devil looking character from Honeycombs
