    Katie if you used pasturised eggs and powdered/icing sugar in place of castor sugar then you can make swiss meringue buttercream without going through the whole process of heating the egg and sugar mixture. Just start with mixing pasturised egg whites and icing sugar and once it reaches the perfect consistency mix in the butter

    Hey! Love your videos💖. I really want to start a bakery in the future but I’m a little lost when it comes to shipping out and cakes since I’ll be working from home and making sure the cakes done get destroyed whilst it gets sent out. Do your customers get your cakes by collection or do they get it sent to them directly?

    Hi, really enjoyed the video! I also use your honey cake recipe it's amazing :) But I have one question, is it not safe to use non-pasteurised egg whites?

      It’s safe when making Swiss or Italian merengue as heating egg whites up helps to kill the bacteria but I just prefer to be extra safe and choose pasteurised egg whites 😊

      I do have a separate fridge and freezer but I didn’t have one when just started ☺️ bought it about a year ago. You don’t need to have one!
