So… for Canadian Thanksgiving I tried this recipe. I totally forgot the raisins and rum (the horror!!) and since the store were closed, I substituted canned pineapple nibs and used the juice mixed with fresh ground ginger. Other than guessing the temp and time (it took much longer than I thought it would) it was a big hit! I think I may just make it again on purpose! ❤ just adore this recipe…

according to Nigella's website it takes 45 minutes but does not disclose the oven temp. And then you got to wait still 10 min to eat. A long time for my impatient and curious nature.
Thanks - I made some lemon marmalade and tried this recipe and it was very good, although I didn't add anything else except grated fresh ginger. Guess I'll be making more pudding since I have 2 big jars of marmalade left. @@kurtisburtis
