The only things I would recommend are that we would usually would use a deeper pot of oil (deep fryer if you have one, but just a deeper pot makes a big difference for both consistent cooking and mess) and maybe slightly less batter per cake, or make the batter slightly thicker so that it doesn't turn into a pancake. Also, it can help to put some absorbent napkins or paper towels on the plate before you pull the cakes out of the oil--that helps to soak up some of the extra oil dripping off the cakes and makes them just a little less greasy. Let them sit on the absorbent materials for a minute or two before you transfer them to a serving plate and put whatever topping you choose on them.

They started selling Funnel Cake mix a while back in the supermarket. Since it was only sold at carnivals and fairgrounds and they had the equipment, I never was brave enough to try. And there you go in the UK and you pretty much nailed it. A skillet with deeper sides would probably work better and I think it looked like regular sugar rather than powdered sugar you poured on. The classic is just powdered sugar or what we also call Confectioners sugar. I love that you’re able to handle constructive feedback. Love being in your kitchen. holes in the middle is how it should be cus it should be able to be torn apart by hand....both looked good to me....I would actually go for the first one....tip is to pour the powdered sugar & other toppings all over the funnel cake while it's still hot & make sure to coat the whole thing not just the middle....measuring cup with the little pour spout part & slowly going around in circles then going side to side is the easiest way if you don't have a funnel
I've never tried funnel cake, only fried dough. Here in Rhode Island, and possibly elsewhere in New England, fried dough is known as a "doughboy." I don't know why. I prefer them with cinnamon and regular (granular) sugar.
It looks like the batter was fine, but you should have used more oil. That was shallow frying, and you need to deep fry them in at least 3-4 inches, or 8-10 CM of oil, in a nice deep pan.
These are something I might have once every other year at festival or fair. It just takes so much oil, like homemade donuts. The game not worth the candle. Otherwise I just make a coffee cake or other kind of dessert. My family is particularly fond of Hot Fudge Sundae Cake.

It shouldn't take that long to cook one side 1 to 2 minutes per side. I am assuming that the oil wasn't hot enough or lack of oil in the pan. You should add more oil. The funnel cake should be floating on the oil.

Some people use squeeze bottles (like they use for ketchup) for making funnel cakes.

In the US, Aldi sells funnel cake kits for a few dollars and it even comes with a pitcher to pour the batter. It works great and is cheap.

My friend used to make these with a tea pot ,and a cast iron pan to keep the heat even. A little rice in the sugar shaker to break up the sugar.

Hi, let your mother know that the secret to a homemade funnel cake is using a box cake mix. Ask her to try one and use her creation.
I think if you used a deep fryer it would work better so it can sink into the oil completely covering it, then it floats up when done,or close to it
