Super Moist, Super Popular Banana Cake

  • This is my all-time favorite, easy banana cake recipe, made completely from scratch! Perfectly flavored with extra bananas, soft, fluffy, moist, and topped off with a silky smooth cream cheese frosting and chopped walnuts, this is the snack cake of your dreams!

    Ingredients
    ¾ cup unsalted butter softened to room temperature (170g)
    ¾ cup canola or vegetable oil (175ml)
    1 cup light or dark brown sugar (200g)
    ½ cup sugar (100g)
    4 ripe bananas, peeled and well-mashed (this is about 2 cups mashed) (470g)
    2 large eggs lightly beaten room temperature preferred
    ¼ cup buttermilk (60ml)
    1 Tablespoon vanilla extract
    2 ½ cups all-purpose flour (312g)
    1 teaspoons baking soda
    1 teaspoons baking powder
    1 teaspoon salt
    Silky Cream Cheese Frosting:
    8 oz cream cheese softened (225g)
    ½ cup unsalted butter softened (113g)
    1 teaspoon vanilla extract
    ½ teaspoon salt
    2 ½ cups powdered sugar (315g)
    1 Tablespoons heavy cream
    ½ cup chopped walnuts for topping (optional)
    Instructions
    00:00 Introduction
    00:20 Preheat oven to 350F (175C) and spray a 9x13 pan with baking spray or lightly grease and flour. Set aside.
    00:52 Combine butter and sugars in the bowl of a stand mixer (or in a large bowl and use an electric mixer). Beat until well-combined and light and fluffy.
    01:13 Add oil and beat to combine.
    01:19 Stir in mashed bananas.
    01:26 Add eggs, buttermilk, and vanilla extract and stir until well-combined.
    01:44 In a separate bowl, stir together flour, baking soda, baking powder, and salt.
    01:59 Gradually add to wet ingredients until completely combined.
    02:19 Spread batter into prepared pan and bake on 350F (175C) for 45-55 minutes* or until a toothpick inserted in the center comes out mostly clean with few moist crumbs. Allow to cool completely before covering with frosting.
    Silky Cream Cheese Frosting
    03:12 Combine cream cheese, butter, vanilla extract, and salt in a large bowl and beat with an electric mixer until creamy.
    03:33 With mixer on low-speed, gradually add powdered sugar until completely combined.
    03:53 Add heavy cream and gradually increase speed to high. Beat on high for 30 seconds.
    04:07 Spread over completely cooled banana cake. Top with chopped walnuts (if using). Slice and serve!

    *Important -- keep an eye on your banana cake as it bakes. 30 minutes in, check your cake to see if it's becoming too brown on top (pay attention to the edges, if they're getting darker in color and pulling away from the edges), if so you may lightly tent with foil before baking the remaining 15 minutes. I had this issue when baking in a glass dish but not in a metal one (which was the opposite of what I expected).

    Hello 15 year old here! I want to firstly start off by saying I rarely leave comments on RUclips for any type of tutorial so this is new! I'd like to say that I really appreciate the fact you placed all the ingredients in the description and that you took time to put chapters/time stamps for the video which made the whole baking process easier ^^ I have only just gotten into cooking and baking a few months ago so I was very shocked with my outcome. This was the first time I ever baked a cake by myself and let alone from scratch, so I am really proud of myself and this wonderful lady's tutorial was extremely helpful. So thank you for this wonderful recipe and I hope you enjoy the rest of your day ^^!

    This is such a great recipe. I added semi sweet chocolate chips and walmuts and used milk instead of butter milk. Turned out to be so yummy.

    Thank you very much for the recipe and for adding grams to make baking easier.
    I baked this cake today, it is really tasty and moist. BUT: I reduced sugar and butter and added walnuts. For the dough I recommend to just use maximum 200 grams of sugar. It's absolutely fine and more thank enough since you have 400 grams of mashed sweet bananas. I added 80 grams of walnuts additionally, which balance the sweetness a little bit plus a teaspoons of cinnamon. You can easily use whole grain flour, since you have baking powder and natron.
    For the frosting I just used 50% of icing sugar and didn't use the butter.
    This was absolutely fine and enough.

    Looks yummy! This will definitely be on my list of things to bake. I've also never been a fan of the word moist but I think since I've watched so many of your videos, I've gotten used to hearing it, lol. Also love the sad music when the electric hand mixer is used instead of the stand mixer, I feel like my Kitchen Aid also feels that way now that I've upgraded to a stand mixer (my kitchen aid is still on the counter but has been demoted out of the "stand mixer" spot) that can handle the bagel dough recipe you've shared as my husband loves a bagel every morning before work.

    i just made this last night, and it was incredibly thick and moist!! i added cinnamon and made a streusel topping instead of icing and it worked out beautifully!!!

    After reading the recipe amounts, I decided to change the measurements for the butter, the oil and the buttermilk. I used half a cup of butter, half a cup of oil, and 3/4 cup, buttermilk. I just didn’t think with all those bananas that the cake needed more than a cup of fat/oil. I was right. The cake turned out amazing and super moist.

      Yes, you can add it just before baking. Adding the streusel shouldn't affect the bake time. 🙂

      As long as yours is neutral it should work fine. You just don’t want a potent oil that takes over the flavor. 😊

    I do mine basically with sour cream in a loaf pan but same ingredients but I’ll do 4 bananas instead of 2 !

    How can you double it? Would you just double the amount of everything or would you need to add anything extra, and would cake flour be better for this cake?

      You would just double all ingredients! The recipe was created with all-purpose flour, so it works just fine. I haven’t tried it with cake flour but I think it could work if substituted properly. 🙂

      If you don't have buttermilk I would recommend making my buttermilk substitute. You can do this with almond milk but you lose some of the fat. sugarspunrun.com/easy-buttermilk-substitute/

    One of the ladies stated that her banana cake always came out heavy, while this one was so light. My question is, which ingredient(s) makes this cake light. And, what ingredient could've possibly made that lady's cake heavy?

    You know that canola oil is vegetable oil. It doesn’t come from canolas😊

      They are two different items sold separately in the grocery store and you can use either ☺️
      Avocado oil will also work.

    Smelled great, but ultimately it sank. Baked for 45 min on 175C, it started to get a bit too brown at the top for my liking. Used oven thermometer. At 45 min mark inserted toothpick, toothpick came out clear, and toothpick upon insertion showed how light and airy but moist the cake is and it was nicely risen but when taken out to cool and as it cooled it sank. Unsure why this happened. None of you reasons for why the cake sank are faulty in my case. Not even under/over mixing as I mixed for exact time as you have. All the ingredients except bananas were new, and were tested before using. I used scales for this recipe. Unsure what went wrong but probably wont try this recipe again.

      Sounds underbaked unfortunately, next time cover with aluminum foil if it starts to brown, so the top doesn’t brown too muchand I would bake longer. I hope that helps.

    Carefully "custed?" that's not a word. Those bananas aren't even remotely ripe. You should use bananas that are truly ripe.
