Uhm, only 3 northern states of Mexico have the copyright to produce "Sotol", it's like saying you make Sake in Kentucky. You can absolutely make the drink, but by law it can't be called Sake, if it's made outside of Japan.

Sake just means liquor in Japanese. Sotol is not a trade protected term. Tequila is, Mezcal is, but no law “protects” the designation of Sotol.

There is actually a Mexican sake from Sinaloa. But I agree this people basically claim something that's not theirs as theirs.
