Try These Oven-baked French Fries | Jacques Pépin Cooking at Home | KQED

- No fryer? No problem. Jacques Pépin picked up this oven-baked french fries recipe from his daughter, Claudine. It has less calories than traditional fries and you don't have to stand over a fryer. Just pop them in the oven at 425 degrees for 45 minutes. Jacques goes the rustic "skin-on" route (aka "In-n-Out style") but feel free to peel according to your preference. Happy cooking!
What you'll need:
1.5 lbs potatoes, 2 - 3 tbsp oil (jacques uses peanut), 1 tsp paprika, 1 tsp herb de provence, salt

Can do the same by cutting them into wedges too. Might have to increase the cooking time a bit though, depending on the thickness of them.

@@johnmartinez7440 any average restaurant. Say for example, osmow's shawarma. Their fries are deep fried but they're frozen before that. They don't cut them in the kitchen.

Herbes de Provence and Italian seasoning are basically the same thing.

Master French chef Jacques Pépin is totally awesome! He is the best chef and teacher!
I cooked them in the air fryer. 16 minutes at 150 C and 12 minutes at 180 C. 1cm thickness. Really enjoyed them.
This man’s recipes are so simple and easy, but each one I try is excellent. Try his leek soup recipe, it’s outstanding!
Funny :) Chef gets closer and closer to just normal household's kitchen, in both agenda, ingredients and techniques. Feels reassuring that our little "rounding the squares" is not a crime in the kitchen!

It's so simple, I'll try it. Usually I just buy the frozen ones and stick them in the air fryer oven for 20 minutes. I used to deep fry in oil, but it's a bit messy and you need a lot of oil. The deep fried ones are the most tasty though.

I do basically identical chips but I parboil first then shake through a colander then do the seasoning because I like the fluffy edges (that become nice crispy edges), my oven has an "air fryer" rack in the top, I make them when I'm cooking something else as a roast so it doesn't matter if any oil drips. Very nice. Don't have to parboil them though, and most of the time I don't bother haha.
He's using the Yukon Gold. Excellent work chef 👌🏼
Ive been making these ‘almost’ exactly the same way for years. Only difference is I par-boil the fries after I’ve cut and washed them. Then I drain in a colander before putting into the oven 😊

So much better than the usual deep fried fries. Use air fryer (or toaster oven with air fryer setting) and they will bake in 1/2 the time.
I use a variety of spices such as cumin, garlic powder, oregano, etc.

If the Chef doesn't try one, I remain skeptical.
To get these crispy, try baking them twice. When they start to sizzle, turn off the oven, open the door and let them cool off. Switch the oven on again later and they will crisp up nicely.

He's a magician. Things keep disappearing, and he soaked those fries in seconds instead of minutes!
Done it like this a few times, and although it is delicious they tend to not turn out crispy at all. Boiling them before you put them in the oven seems to work better
...and even freezing them, I'm told!
Thought about doing just that.
As traditionally they need to be fried twice, once at a lower temperature and the second at a hotter temp to crisp them up, that makes sense.
If you have one, place the potatoes on top of a wire rack placed on top of the baking sheet. You need the air flow on all sides to prevent the sogginess. These potatoes seems better suited for using an air fryer for that reason.
I parboil, then finish them in the oven - lastly under the broiler for crispness. Often as not though I make flavour full smashed potatoes instead. Deliciously crispy outside and a bit of softness within. They do well in my biggish toaster oven

Always love your videos for years but I never put them in water. Just spread them on a large pan with oil and seasoning then under the top broiler in the over on 525 degrees. Takes about 20 minutes, flip them half way thru. Better than french fries even. I cut up and onion with it

I love french fries but I hate the smell that's in the house when you fry ANYTHING...This is an excellent alternative for potatoes 👍🏼💛.

I've done this before with russets and olive oil, but i think i will try his potatoes with peanut oil next time.
Id toss the fries in a tin covered tray for the first 20-30 min first, add a bit of water at the bottom of the tray.

Put it in the air fryer with no oil and half the cooking time of the oven you'll get the best french fries. Not even kidding. The revolution of the air fryer is real.

Tips and techniques
One trick I learned for sweet potato oven fries is to par boil and freeze first. Then you can oven bake them, but flip them over halfway through. This may work for regular fries if you want them crispy.
