My local Kroger had some awesome cajun wings. I asked them what they used and the meat counter guy (who I talked a lot with) came back with a bottle of cajun seasoning that they did not sell on the shelf. He gave me the half used bottle and said "don't let anybody know!" I've since found a much better cajun seasoning recipe and it's what I use now. The point of the story is: ask your butchers what they use. I've found most are more than eager to share how they do things like this.
Good Video Dave from one Buckeye to another. I have smoked the Costco ribs a few times and they have always been good. My one complaint is, at least at the Costco we go to, they leave the membrane on and I remove it before smoking.
