  • 🟢材料:
    雞蛋 3隻
    皮蛋 2隻
    鹹蛋 1隻
    雞湯 300毫升
    紹興酒 1湯匙
    胡椒粉、油 少許
    蔥花、熱油、蒸魚豉油 適量
    🟢做法:
    1️⃣ 把鹹蛋打進大碗裡,鹹蛋黃撈出,雞蛋也打進大碗裡,加入胡椒粉、紹興酒、少許油、300毫升雞湯拌勻。
    2️⃣ 把蛋液過濾一次並倒進盤中,加入皮蛋和鹹蛋黃,用保鮮膜封好,在保鮮膜上戳些小洞。
    3️⃣ 水滾下鍋,中火蒸8分鐘,然後焗5分鐘才開蓋。
    4️⃣ 撤上蔥花,灒入熱油及蒸魚豉油即可。
    🟢Ingredients:
    Chicken eggs - 3
    Century eggs - 2
    Salted duck egg - 1
    Chicken broth - 300ml
    Shaoxing wine - 1 tbsp
    White pepper powder, Oil - as needed
    Spring onions, Hot oil, Seafood soy sauce - as needed
    🟢Cooking Directions:
    1️⃣ Beat the salted duck egg in a large bowl and scoop out the yolk. Add the chicken eggs, white pepper powder, Shaoxing wine, a little oil, and 300ml of chicken broth. Mix well.
    2️⃣ Strain the egg mixture and pour it into a dish. Add the century eggs and salted duck egg yolk. Cover with cling film and poke a few small holes in it.
    3️⃣ Bring a boil of water in a pot and steam over medium heat for 8 minutes. Then bake for 5 minutes before opening the lid.
    4️⃣ Garnish with spring onions and pour hot oil and seafood soy sauce on top.
