I canned these meatballs yesterday and heated them up for lunch with homemade fried okra on the side. They held together perfectly, moist but firm, very yummy. So many ways you could serve them. I will be making two more batches this week to put in my pantry! Leisa you are the bomb!!!

I never had a dought that they would be awesome! The minute they rolled out of that jar you could tell they were plenty firm and not mushy. Super job Leisa! ❤️👍🏻
Just thought I would stop in and say that because of YOU.... we stocked up on Toilet Paper and Paper Towels three months ago LOL. At the time we thought it was overkill. Now.... our local stores are OUT, the world is becoming unraveled around us, but we have everything we need - even toilet paper LOL. Thank you for getting us motivated and mentioning toilet paper LOL

Oh thanks...I've been doing my best to NOT break into my canned meatballs until at least June, but now I really want to! LOL. I canned both beef and spicy chicken meatballs, and a lot of them, in anticipation of needing some variety should SHTF really hard.
I canned meatballs last night for the first time. And, opened up a jar this afternoon for a late lunch just to test them out before getting some more ground beef to can while it's on sale. They were good! I am going to get that ground beef while it's on sale and put up some more. The texture is much better than canning the ground beef "loose" after browning.
That's an old Pyrex refrigerator dish. Food storage before plastics. I love and use mine constantly. You can find them in many colors/designs at antique shops, collectable shops and online.
I would have waited the extra half hour for mashed potatoes or rice. Don't rush on our account !!! lol. I loved the way you made the roux and got it to that golden brown flavourful stage...
If you never canned before, please know that it is delicious. It is not like store bought. I do not understand why store bought canned meats tastes so awful. My favorite is stew. I make a rue pour in the homemade canned stew and let it make a gravy. It tastes like grandma came to visit and made a pot of stew for me. 😃. I will have to branch out and can meatballs!
I made meatballs and canned them up in beef broth. I par baked them for fifteen minutes at 350 degrees. I then pressure canned them for 75 minutes. 2 out of the 6 jars didn’t seal properly, so I just had to try them. I don’t think that they were mushy, but very tender indeed

He is so funny! At first, he is pushing around his meatballs, thinking “do I really have to do this”, then after his taste test, it’s yum, yum give me some more, do we have any mashed potatoes? Those are on my list to try very quickly. Unfortunately, I have the flu (or whatever, it feels like the flu) just when I need to be canning like a mad woman.
I canned them up added a few different powdered items. Celery and a couple tablespoons of zucchini powder. Canned them and my hubby is picky I said taste these and I want your honest opinion would you eat these again. He said they were tender and tasty. I am currently canning up more.

Gretchen Alawneh I never use flour in gravy, my grandmother taught me to use cornstarch because it was less likely to lump. I have not canned meatballs, but I have canned marinated boneless pork chops. No need to use the butter and gravy mix, just bring liquid to a boil, make a cornstarch slurry with equal parts water and cornstarch and add to boiling broth.
Absolutely cornstarch gravy is absolutely wonderful I don't know how to make it in a pre made mix the way that I do this but you can make it on the go very easy
I’d say, Absolutely! I use only cornstarch in my gravies. 1 tablespoon in a small jar and 2 tablespoons water; shake well and add to the pan. Add water when the batch starts to thicken.
Thanks Leesa. I will be cold packing some beef in a few weeks and wanted to get a jump start on the prepping. I did some vacuum sealing today and it went good. Only two of us in our household now so the vacuum sealing seems to be the key for us. I appreciate all your videos.
I made pint jars of the meatballs three different ways . One pint each just to try them. I'm sorry to say we did not enjoy them at all. Went in the trash. Being part Italian, real meatballs need cheese, bread crumbs and eggs. I guess I'll just make my usual recipe and freeze them to have as needed, like I usually do. The canned meatballs seems like a good idea. I love your channel though.

Fat is not the enemy and you know what is! I remember life before the food pyramid I was a small child but I remember. Americans ate a very different diet and very few people were obese! Nobody in my family was overweight. My blood sugars have been 570 550 but I'm not diabetic in the classic way. I have a disorder no one else in the world has and I was a 30-year research patient in Boston Massachusetts. My insulin receptors do not function so every time insulin is released it just floats around and causes problems. Now they've actually got me on insulin and it used to work but it's not working right now and I keep telling the doctor I need an insulin level done because this is how my body reacts when it's too high! She and another doctor said it's not necessary. They are now recommending that everybody over the age of 15 have an AIDS test. She also knows that I'm an MD. So I said fine I don't get my insulin test you don't get your AIDS test! :-) I can't wait to cancel meatballs but they're awfully small. However I can see them with a nice gravy and some sour cream and mushrooms over mashed potatoes! Thank you for the tutorial and the follow-up! :-)

When I was a kid, my Mom would serve gravy over bread if we didn't have any rice, pasta, or potatoes cooked. Was really good and also filling.🤗

Why not use almond or coconut flour? It takes very little and is delicious (coconut flour).
