Thankfully us Americans have made other things out of pumpkin - cookies, bread, cake, soup,... I personally prefer making just the custard only (I do use only nutmeg & allspice - but for custard I have to use a certain amount of sugar)
The thought of Christmas in a warm climate seems bizarre to me, coming from the UK. I expect it to be cold! But the food looks great as ever from the ladies.
One nice little hint in this episode: As long as you don't have a problem with coconut, making coconut milk part of the cooking water for rice is a beautiful way to add flavor. Besides being tasty on its own, the soft coconut milk flavor in the rice complements lots of spicy options you have for preparing beans to serve on top. Oh -- I also love loaded ginger cake. I make mine with what most would consider way too much spice and molasses, an overly generous dump of dried fruit (currants, chopped pineapple and dates, cranberries -- that sort of thing), chopped nuts (preferably blanched almonds), and orange juice concentrate.
I thoroughly enjoyed this episode. Clarissa's knowledge of Jamaican food is quite profound. Two beautiful ladies cooking up a storm and making hilarious comments is quite a treat!

Do you know why in old movies and books such a big deal was made out the family roast chicken dinner on Sunday’s? It was because prior to large scale “factory farming’ of chickens it was extremely expensive and to many consider a luxury meal. My father tells stories of the once a month Sunday roast chicken dinner and how everyone got two to four slices of breast meat depending on the size of bird and little children could get a wing or a drumb stick instead of a slice of breast meat. After dinner any remaining meat was picked off the carcass. The carcass was boiled to make chicken broth and the remaining meat was used to make Chicken soup that was dinner normally on Tuesday because refrigerator were much smaller and unless you were rich you only had one so space in it was always in short supply. I am old enough to remember my mother buying eggs to hard boil three or four weeks before Easter because grocery stores would run out of them about a week or so before Easter and the price would increase by almost a dollar a dozen which in today’s grocery money value would be like 4 or 5 dollars. So people can witch and moan about factory chicken farming but personally I don’t really care because eggs and chicken are all things considered still reasonably priced today especially when look at the price of beef and ever increasing price of fresh vegetables and fruit.
@@gullreefclub In today’s world, most of us don’t need to consume animal products/by-products. The few that do have health conditions or live in a food desert. The price of animal agriculture (never mind the horrors surrounding the entire business) is having an effect today on the world around us. Fresh fruit/veg/lentils/grains are cheaper in more ways than 1. I’m not talking about exotic produce but produce which are hearty/filling and grow pretty much anywhere. To say that you “don’t care” speaks to your character btw.

It's so funny now to see them using such small knives to chop with while today most cooks use large chef's knives. And mixing with a dinner fork or spoon while I use spatulas and wooden large spoons or a whisk. Just something I noticed. Also she wears the same beautiful top every episode but in a different color. I love these ladies and watched them when I was young up until college maybe. So happy to find their old episodes! RIP

No matter the size of the job, there I am chopping with a paring knife and mashing away with a dinner fork Even the whisks I use are pocket-sized -- small enough that I keep one in my purse in case I need it at work. Yet, somehow, I never develop any upper body strength ...
No problem with doing that as long as you wash your hands carefully afterwards. Just don’t rub your eyes or scratch you nose or other places before you do 😁
I tend to put a little oil on the hand I am holding the chilli with ( but not the one I'm holding my knife with) the stuff that makes the chilli hot is fat soluble so this makes it easier to wash off at the end.

A fun Christmas special, spicy Christmas dinner in a hot Caribbean setting. Though they missed a chance for a joke, when the check-in lady asked about baggage, Clarissa or Jennifer could have claimed the other was the baggage.
The food looks good, but it is more Jamaican-inspired than Jamaican. The cake baked by Jennifer, for example, would be more of a tea than a pudding. But this has been a treat all the same.

I love pumpkin pie, but my family, not so much. I grew up in the U.S. eating it every winter -- several times each year -- but you have to imagine it from a different perspective. Such as, imagine if the English only used cucumbers or potatoes to make sweet, sugary Slurpees. It's about the same. Almost incomprehensible to we Yanks.
I totally love these two, but it strikes me as annoying when someone who is not American (if you're American) insults your food, it feels weirdly personal. I think insulting ones country's foods, is often experienced as a personal insult. I'm always very respectful of other people and or culture's foods, so yeah...IDK, those little jabs bothered me. Also, I totally LOVE Pumpkin Pie!! It's so good and it's my youngest son's favorite dessert year round!

The food looks good, but it is more Jamaican-inspired than Jamaican. The cake baked by Jennifer, for example, would be more of a tea than a pudding. But this has been a treat all the same.

I love pumpkin pie. i wonder if they've only had ones that were what i'd also call nasty. good pumpkin pie should not be too sweet, the custard firm- not slimy or mushy, and should have a bit of cinnamon and good nutmeg. i'm not really insulted- i've seen the Ladies cook "authentic American" food that looks rather strange to me so i say the jokes and teasing can go both ways.
+Heather Cox My mother is English and my father Irish. The TFL are not alone in their opinion regarding Americans and pumpkin. That feeling is practically ubiquitous. I love pumpkin pie, but my family, not so much. I grew up in the U.S. eating it every winter -- several times each year -- but you have to imagine it from a different perspective. Such as, imagine if the English only used cucumbers or potatoes to make sweet, sugary Slurpees. It's about the same. Almost incomprehensible to we Yanks.
I totally love these two, but it strikes me as annoying when someone who is not American (if you're American) insults your food, it feels weirdly personal. I think insulting ones country's foods, is often experienced as a personal insult. I'm always very respectful of other people and or culture's foods, so yeah...IDK, those little jabs bothered me. Also, I totally LOVE Pumpkin Pie!! It's so good and it's my youngest son's favorite dessert year round!
Come. come... Cant you take a joke? Especially from two old ladies that already passed away? They were whooping it up just about everyone in their shows. Just put away pc bull and have a chuckle, even if it aimed at you. After all, everyone can laugh at others, but only people with sense of humor can laugh at themselves.

A fascinating introduction to Jamaica - pretty much not a single non-European face to be seen, but then most weeks it was always the most privileged people that hosted the ladies. I wonder if the Beeb could get away with that now.
