I am thinking the same thing! Both of these people look like they are going to shoot a porn movie after this video. They are giving weird expressions to each other.
I am irrationally angry that they did not test the pH of the cheddar and gruyere after that long preamble about the perfect pH. First, prove they are in the melting zone, THEN demonstrate with the damn pizzas.
Technically, you were never promised an explanation about WHY you always did. By the way, did you always not use mozarella ? Obviously using mozarella instead of gruyere is the right way to melt gruyere.
@Azliana Lyana It does matter. You don't cook alot but shredded mozzarella cheese does not melt at all. Its important to use the right ingredients for cooking.
What I'm curious about is why, when put on a hot surface, cheese can first melt, then solidify again. That must be some kind of chemical reaction, but it piques my interest. Say you make a grilled cheese sandwich and the cheese leaks out, then it touches the hot surface and it starts going solid again, albeit browned. There's of course not just 1 type of component to cheese, but it's so unnatural, since after all a solid metls, then turns to gas. Not melt, back to solid. So I'm curious what happens there.
They’ve def smashed. Took me awhile Bc I thought I was gonna be learning but it’s hilarious that they’re making pizza in lab coats. Also....why did you need to make this video to tell us mozzarella is the best melting cheese Bc it’s acidity level is perfect? Seems like something that could’ve been done in one sentence. See: 2 sentences back
Mozzarella isn't kneaded like pizza dough. I've watched loads of mozzarella making videos and that doesn't happen. It gets heated in very hot water and stretched a bit. But it's not kneaded like dough.
Here in Australia, Light Cheddar cheese makes a good substitute for Mozzarella. Not as stringy as the Mozzarella but it doesn't go oily light full fat cheddar.
And it's better choice for pizza than fresh mozzarella. Mozzarella is to moist. So it will most likely make your dough soggy. I'm only using it for authentic Neapolitan pizza and its real tricky to do it right. So they missed point in video. Yes, mozzarella have best melting and stretching but there is many better options for pizza. Best way to use mozzarella is cut in slices, heat it up just little bit, put olive oil on it and that's. If you mixing mozzarella with strong tastes you will not feel gentle structure of it.
I am here to combat my cheese addiction - melted cheese is the only form of cheese kind of grosses me out and I need to get into my head that cheese is gross - @3:14 totally did that 😂🤣
A good bit of science. I’ll now have to purchase a ph meter. The pizza demo would be much better using a real, wood fired pizza oven. Generally domestic ovens aren’t hot enough to get the best results.
No such thing. Vegans are not the smartest lot. Humans are not evolutionarily suited for only plant-based diet. We are omnivores. Eat some meat and shut up already.
The cheese on pizza does not have to string. It's silly. It's better to just get a good cheese onto a pizza - go for flavour and forget trying to make it string. It's actually messy and annoying when cheese strings.
Apologies for my pedantry but when comparing the cheddar and gruyere you would be looking for the better not the best. Grammar, spelling and correct English. I’m often wrong but not as much as the BBC presenters nowadays.
The seriousness on that guys face at 2.12 when discussing the stringiness of mozzarella, makes me suspect a near sexual level of appreciation.
"Mmhmm" hahah I was cracking up. Came here looking for this comment
I am thinking the same thing! Both of these people look like they are going to shoot a porn movie after this video. They are giving weird expressions to each other.
Hahaha I was just about to comment about that!
Dying 😂🤣😂
This guy fucks cheese confirmed.
So, just what does that have to do with the title?
click bait
😂😂ikr
because its bbc , bbshit
I was thinking same the dick heads
It’s probably referring to the unsuitable cheeses that stupid people try to melt onto different foods such as pizza, chips, pasta and toast.
I am irrationally angry that they did not test the pH of the cheddar and gruyere after that long preamble about the perfect pH. First, prove they are in the melting zone, THEN demonstrate with the damn pizzas.
if gordon ramsey was looking at those pizzas he woul be like
"Did you fkng microwave them? They look disgusting
Interesting, but not teaching us how to melt cheese... CLICKBAIT title
3:00 the way she says gorgeous I think I've fallen in love 💖💖💖💖
So I watched this and still do not know how I have been melting cheese WRONG my entire life.
Technically, you were never promised an explanation about WHY you always did. By the way, did you always not use mozarella ? Obviously using mozarella instead of gruyere is the right way to melt gruyere.
Well, have you been testing the pH of your cheese before you attempt to melt it? I DIDN'T THINK SO.
I came for the melting cheese stayed for the sexual tension 😂
@2:13 when you hit the bongo for the first time and your mom starts asking you if you want dinner
"Cheddars high fat content makes it look unappealing."
Are you kidding I would inhale this in 3 seconds
For me I like the cheddar cheese oil separating some, the oil doesn't brother me a bit.
Same here. Cheddar looking tasty, and i love that oil from it.
Me to i like it the oil and I ate 3 of them and am not full
Pizza with Gruyère is to die for….
Doesn't matter, as long it's melting and still taste cheesy :)
But sometimes presentation matters 😊
@Azliana Lyana
It does matter.

Sorry, but the cheddar oil pools looks much better to me than anything. Who wouldn't want cheddar oil?!
Explains why I couldnt melt cheese a few days ago. Too alkaline.

It’s just losing moisture.
Those are ashes
Science isn’t that simple for example frozen carbon dioxide is solid but doesn’t melt, it changes directly to a gas (process of sublimation) 🧐

HEYYYYY THE SONG AT 2:43 THOUGHHHH 😭😭😭
It was less about HOW you've been melting cheese
and more about WHAT cheese you've been melting.
I came here to see if you can melt feta and I found out at 1:41 now I'm leaving
i'm sorry but why is there sexual tension between these two to me

Definitely an inspiration for This Time
That elastic band reminded me of the cheese elastic band the mouse made in Mousehunt
The bbc food advice - Brought to you direct from the Italian tourist farm and food industry.
I’m gonna melt that cheese and put it right on my burger for lunch today 😀
I don't care! It's the taste that counts even if it doesn't melt "perfectly". But the science behind the variability is interesting!
I am here to combat my cheese addiction - melted cheese is the only form of cheese kind of grosses me out and I need to get into my head that cheese is gross - @3:14 totally did that 😂🤣
Extra Mature Cheddar all the way, it's the best for cheese on toast 👍👍
A good bit of science. I’ll now have to purchase a ph meter.
The pizza demo would be much better using a real, wood fired pizza oven. Generally domestic ovens aren’t hot enough to get the best results.
Changed the title and this video is a banger @BBC
What’s about Monterrey jack
i have searched how to properly cheese
BBC how dare you to arouse false expectations with that title?
Gordon Ramsay should watch this
What about vegan cheeses?? 😬
Well that isnt cheese is it.
No such thing. Vegans are not the smartest lot. Humans are not evolutionarily suited for only plant-based diet. We are omnivores. Eat some meat and shut up already.
Jason Peters just because vegans call it "cheese" doesn't mean it's real cheese. So nope....
Lancer525 boi have you heard of nut cheeses? There such things like cashew ricotta and soy cheese. Which are for people that are *lactose intolerant*
A news channel clickbaited me
This man needs to go home, just put all of the cheese on the pizza
This guy is waaay too serious
"... measure it with the pH"?!?! pH is not a tool to use for measuring acidity... it's a unit of measurement.
I guess throwing on a lab coat doesn't make one smart.
Im sure he meant “with the pH meter”. Go check out /r/Iamverysmart, you belong there.
I’m not prejudiced. I would devour all 3 of those pizzas
You forgetting raclette
mozarella is a blessing from above
Look's like something off a horror movie
No, I haven't.
These people have obviously never heard about Provel!
But mozzarella's tasteless ...
Is this from episode three of This Time?
I bet I can get goronzola to be melted ok with soduium citrate.
The title is deceiving. Really what it means is what cheese is best for melting.
On god they did it before during and after this video
The cheese on pizza does not have to string. It's silly. It's better to just get a good cheese onto a pizza - go for flavour and forget trying to make it string. It's actually messy and annoying when cheese strings.
They should try oxacan 🇲🇽 cheese 😋
Apologies for my pedantry but when comparing the cheddar and gruyere you would be looking for the better not the best. Grammar, spelling and correct English. I’m often wrong but not as much as the BBC presenters nowadays.
I dont like blue cheese, but i like a bit of blue cheese on my pizza '-'
Made me hungry for pizza now. Cheers BBC 😔
Oh Cherry. Lovely lovely Cherry.
Nah, nah, nah, nah, nah
Just chuck her in the microwave or the toaster and she'll be all good
But...mozzarella just taste so bad😔
I was hoping she get to eat the pizza at the end of the video, that'd complement her yes spirit from the beginning of the video
What the deuce? Why are you calling cheesy bread pizza? There is no sauce!
Still don’t know how to melt it
some melted cheese is hard to eat it's almost too stringy like eating bubble gum globs
However mozzarella is taste weak
Yep, so many times my cheese leaked or stay ugly solid :S
Mmmmmmmm. Some how they all looked unappealing.
wtf is this click bait... did not teach me how to melt cheese the RIGHT way just told us something we already knew and never questioned!!
Ad lemon juice
No not melting cheese wrong. Cheese and this vid is wrong. Protein strings in folded cheese molds. That’s why you grate it to break the polymer
So basically this guy tells us stuff we've been doing wrong our whole lives, first it was a cup of tea now it's cheese.
Needed, kneaded ha pizza joke
Mozzarella 😃😍
Amazing cheeses, terrible looking pizzas.
