Gregg Wallace is in Gateshead at a cheese factory where they produce 3,000 tonnes of spreadable cheese every year. He follows the production of jalapeno chilli flavour cheese from a 28,000 litre delivery of milk to 5,400 squeezy tubes. The process begins in a traditional way - by making cheddar. He learns about the microbiology responsible for splitting milk into curds and whey and forming this hard cheese. He then chops 344 kilos of cheddar and gouda to make the base for his squeezy cheese, and puts it in a huge blender with whey, water and other ingredients in order to stabilise it and keep it soft and spreadable. Meanwhile, Cherry Healey is finding out how bacteria are responsible for the huge variety in smell, taste and appearance of different types of cheese.
She learns that some smelly cheeses contain the same bacteria that are responsible for stinky feet. In cheese the odour is a by-product, a sign that the bacteria are silently changing the internal texture and taste of the product. She also learns the scientific rules for making perfect cheese on toast. It is all about medium sliced white bread, with precisely 50g of grated medium cheddar, set an exact 18 centimetres from the grill. Historian Ruth Goodman is finding out how cheddar, originally just one of hundreds of regional varieties in the UK, became the predominant hard cheese world wide. She discovers that it is down to a Victorian cheesemaker called Joseph Harding who first standardised production methods. She also makes a batch of processed cheese, using Kraft’s original 100-year-old patent recipe.

Totally. No frying pan. No top on it. Not a cheese toastie. I was brought up on Aussie cheese on toast, a pale cousin to the true American cheese toastie made in a frying pan. I will never go back to grilled cheese on toast!

In the US we do them differently depending on where you live. Cheese toast is eaten here too just not in every state. For cheese toast we toast the bread of choice . Then lightly butter it and add whatever cheese you like. As kids it was sliced American cheese, but as we got older we started using cheddar, Munster and provolone or mozzarella. Last step pop them back in the toaster oven to melt the cheese.
A grilled cheese is very different because the different states put their own twist on it. My current favorite is to use a brooch bread and slices of Munster and creamy harvarti . Next I heat-up a small skillet and melt a small pat of butter in the center of the pan when it’s melted place the sandwich down on the butter. I put a glass lid on the pan. It actually presses on the bread and it keeps the heat centered on the bread and cheese. After a few minutes I check it see if it’s brown enough and if it is I take it out and set it on a plate while I melt some more butter and repeat for the second side.
I have used this recipe ever since I first saw it. The best cheese on toast I've had...deffo.

Butter the toast, then spread some Marmite on it before adding the cheese (50/50 mix of grated medium Cheddar and Mozzarella), then grill until golden brown and bubbly. You're welcome! :-)

I’ve discovered that toasted sourdough bread makes the best toast. 🤓
Exactly the way I do it. But I use mild pre-sliced cheddar because grated is too messy. I also like to put a slice of ham, or a layer of tuna, under the cheese.
I prefer the look of hers. I always wait until the cheese has started to go brown when I make cheese on toast. but these days i prefer to make a cheese jaffle.

Toast the bread first, taking care to cook one side completely and the other only half way. Not as hard as you might think.
Grate cheese directly to half-cooked side of toast, sparsely. Add a teaspoon of finely chopped or sliced onion. Season.
Grill until the corners turn black.
Even on a cheese sandwich that I don’t cook I do not use butter.
Mix grated cheese, chopped onion, spring onion, and coriander, in a bowl adding mayo to bind and chilli sauce for bite.
Spoon onto sandwich-sliced white (or finely milled “wheat meal”) bread and cover with a second slice.
The same mixture can be used for a fried cheese sandwich. Use half-cooked toast. (It makes moving the sandwich easier.) Spoon on cheese mix. Cover with second slice. Fry in a generous amount of olive oil. Turn and fry the other side. This is the best cheese and onion toasted sandwich ever. To make it a full meal add salad (lettuce, tomato, beetroot and a slice of capsicum) to the top of the cooked sandwich and another slice of toast. This healthy meal will sustain from lunchtime right through to dinner. It was my standard diet lunch while I was reducing from 95 to 75 kilos.

You dont toast both sides. Only one, which means thinking carefully when doing a topper. Toast one side ad flip over. No butter on untoasted side. Straight on with the cheese. Back under the grill but reduce temp by a third. Half the distance from grill floor to bars. Slowly watch it melt. Remove when just beginning to orange. Also reducing by a third prevents the edges burning before cheese melts. For different flavours put beans on first or ham or cooked bacon. Then fry an egg and remove COT from grill Place the egg on top. Nom,nom,nom
I've been making grilled cheese sandwiches my entire life and TOTALLY different. You start by taking plain white bread and putting either Mayo or I like Ranch Dressing because of the seasonings and putting on the side of the bread that will be browned in a nonstick pan or skillet. Then you take a mild cheese...I like Pepper Jack.....and put thin slices of that in the middle for a decent middle portion, then put the remaining piece of Ranch coated bread on top. You brown the entire sandwich starting first the bottom piece of bread, then flip and brown the top. By the time the top piece of bread is brown, the cheese is melted inside. The outcome is delicious. I usually add bacon, avocado and/or dried tomatoes to the inside too for extra flavor if you have it around.
50g of cheese can only be the optimum amount for the size of toast he is using. There are toasters (eg Lakeland) which can take larger slices.

@@mustafahumar3831 Spread marg or butter thinly over two slices of bread, heat up your frying fan (not too high) place buttered side down on the pan, put your cheese on, place the other slice of bread buttered side up. Flip over after a few minutes. You might need to flip a few times until it's nice and golden brown. It's absolutely delicious and my personal favourite way of having a cheese toastie 😋

I always think that a 'toastie' is a toasted sandwich with bread either side of the filling. I also think that you're probably confusing Americans who stumble across this because to them 'grilled cheese' means 'gridled cheese' which has been cook on a hot surface and not under a grill. (Which is called a broiler in America.)

I really like it with cheeses other than cheddar too. Try Swiss slices or gouda. You can also add deli turkey or thin slices of tomato. Yum!

Buy Philladelphia cheese spread , mix with grated mozzarella and grated mixed cheeses add a couple of tablespoons off Worcester sauce and a sprinkle of chopped chives ,mix all together then ,spread on the bread then grill.

Taste and flavour you'd bake the bread yourself toast it under the grill and use a nice flavoured cheese with a splash of lea and perrins or dusting of smoked paprika.

Spoiler alert: this is cheese on toast, which as any fule kno, needs 2 kinds of cheese COMBINED to taste its best. I recommend Cheddar (let's not quibble, mild, medium or mature are equally satisfying) with a random sprinkling of blue cheese (Danish/Stilton/Gorgonzola) on top. Bung under grill until brown and bubbling. Job done.
