Everyone in my family, cousins and grandparents love to have crystal shrimp dumplings as one of the dim sums (點心) in Chinese restaurants (酒家/酒樓), but except me. I can’t eat shrimps and crabs, due to skin asthma (濕疹). 🦐 On the other hand, your homemade crystal shrimp dumplings look pretty, Miss Angel, which are exactly look like the ones that we tried in Chinese restaurants.👍🏻💖
Usually we like to order steamed barbecued pork bun (叉燒包), Shaomai/steamed small fish dumplings (燒賣), rice noodle rolls (腸粉), steamed meatballs (山竹牛肉丸), turnip cake (蘿蔔糕), lotus leaf rice (糯米雞) and congee (粥) with Youtiao/Chinese crullers (油條/油炸鬼) for a Chinese lunch all the time with my family, grandparents and cousins.
Lmao, i bet they taste great! It takes a lot of practice to get a perfectly shaped dumpling, gotta practice the technique. I started practicing with playdough and then dough. Takes some patience, technique and most importantly speed

Question what does good sesame oil smell like? I've brought the kind you used in this video, and it smelled weird to me. And that's not the first time I've had that happened to me, with another brand. Even thought I stored it in the kitchen cabinet. Then refrigerated it after opening, and it wasn't past it used by date

Nutty, especially when you put it on something warm.
Any off smells - fishy, rancid, wierd - means too much exposure to oxygen/UV/heat.
I've used Kadoya sesame oil for years and have never had an issue with the smell. It should smell toasty and nutty as @recoil53 said
One cause of the problem might be that the store has little product turnover, so the oil is old and became rancid while sitting on the shelves.
