Owner is such a fake. Just watched the full episode, Ramsay has such a tough time getting the owner to stop being so limp and take responsibility and actual try for once. When it seems like he makes constructive changes like firing Keith, promoting front of house Kat to General Manager and giving Chef Kat more free reign in the kitchen, he undoes all of it as soon as Ramsay leaves. The hardworking Kats get demoted and scumbag Keith gets to keep his job. The Kats deserve better honestly.

Context from someone who watched the full episode:
Ramsay concluded that the owner, Steve, is incapable of running the restaurant, and convinces him to appoint Kat (blue hair) as general manager, and give Chef Kat (nose ring) full control over the kitchen (hiring, firing, supply orders, etc) Chef Kat fires one of the cooks, (Richard) because he can't get the hang of the new menu even after several hours. The restaurant has a successful relaunch with Steve not involved, GM Kat running the front of the house, and Chef Kat running the kitchen. Then, as we see in this video, after Gordon left, Steve booted GM Kat from GM position again, domoted Chef Kat to server, and hired back both Keith and Richard.
