Hi Ria, its 4:25 a.m, no words to describe how ah dribbling, best Duck I ever saw since my AAGIEE days some 45 yrs. ago, in Trinidaf. All it missing is d Puncheon rum they added, guessing to soften the meat. I'm always watching your videos so late at night and get sooooo hungry. By the way hope every time you give the meat couple minutes to cook, you and the hubby hit ah shot, only way to enjoy a duck so beautifully cooked like yours. Lol. I had no idea that the karapulay leaves in Trinidad was actually curry leaves. You do learn something new everyday!!!
Thank you for uploading.. as usual your diction was clear and distinct except for a few seconds here and there... limes are so expensive right now in Trinidad so I use flour and water with some chopped up bandania to clean meats and fish. My curry paste doesn't look like that so I think I have to fry it much longer like you did... enjoyed watching and learning so keep them coming.. you and yours stay safe .... and pass on kudos to your duck butcher.

I am working on the volume issue- since I am not a professional, don’t have a professional set up, I am managing the camera while cooking and moving around the kitchen my voice fades -or sometimes I forget to put on the mic-or the sound of the cooking overpowers everything else. 🙈 I am glad you are still able to learn despite all these limitations in my filming expertise. We can't find duck meat in Jamaica's supermarket, I really would try this but this meat is not easy to come by in Jamaica, chicken is more accessible. But love your duck recipe.

I won’t pressure cook it but can be done . I prefer to cook low and slow. Yes recipe can be used for fowl. Thanks.

So the last water you cook it on slow heat or medium ,i can never get my consistency thick like that or latpat as you called it lol
Nina Hosein Usually low heat until the duck is soft, then I will increase if I need to quickly reduce the liquid.
The two peppers you added at the end was it Jamaican hot pepper ?
