Vegan Charcuterie Board | The Ultimate Holiday Snack 🎄

- Who knew creating a holiday snack board could be such an adventure! Join Crystal and I while we put together this Vegan Charcuterie Board and try some vegan products for the first time. We also show you how to make a delicious oil-free hummus and creamy cashew dill dip!

Oil-free Hummus
2 cans of chickpeas
4 tbsp aquafaba (liquid from chickpeas)
3 Cloves Garlic
2 Tbsp Tahini
1 tsp cumin
1/2 tsp salt (or to taste)
Dash of pepper
1 lemon juice
Blend until smooth
Creamy Cashew Dill Dip
In a blender (or food processor)
Add:
1 Cup soaked cashews
1 tsp garlic pow
1 tsp onion pow
2 tsp mustard
1/2 lemon juice
1/3 cup of water
Blend until smooth
Mix in:
3 tbsp fresh dill (chopped)
1 tbsp fresh parsley (chopped)
Chill and enjoy.
(*this will keep overnight in the fridge in a sealed container and is great the next day)

I love making charcuterie boards, so glad you made a video! Things I include on my board: variety of dips, vegan meats, vegan cheese, variety of nuts, dips, crackers, breads, fruits, veggies, sun-dried tomatoes, artichokes,olives, very dark chocolate pieces, etc. Hope this helps anyone who’s looking for ideas!

Hey Derek! You know actually the water of ALL legumes is called aquafaba, not just that of chickpeas. It’s just the one used most often in recipes because its taste is the most neutral one and it sometimes whips up firmer than that of peas or beans for example;) I’ve tried several different bean waters as vegan egg whites and they work totally fine as well. But yeah the name is not exclusive to chickpeas hehe🤗 Merry Xmas💛

Miyoko's is produced same way as regular cheese. She has an amazing cook book on how to make your own. I adapted her oat cheese to make a base for lots of stuff but esp right now, just adding green onions, garlic and onion powder along with vegan Worcester sauce... tastes just like cheese ball dip (if you were a kid and ate cream cheese mixed with cheddar shreds and those spices... you know).

Try your local asian market! I saw it at T & T last weekend. Our grocery stores have been sold out for months.

I usually don’t like recommending them but have you checked amazon? I have seen it there a few times. But take a moment during your next shop and ask your shop’s manager to please stock it or stock more as you keep looking and it is never available. If they know they will get sales, they will work to get it for you. Also have you checked online vegan and asian shops? I placed a big order just before Xmas from an Asian market and got smoked tofu, marinated tofus (2 different types of marinade), tofu puffs and some tofu skin as well as a bunch of Asian veggies our local shop doesn’t carry. Good luck with your hunt.

Growing up in France, I used to go to the Charcuterie to order slices of ham. I did not even know they came from pigs. Same with saucisson, mortadelle, rillettes and so on. Now I know better. This charcuterie board looks so much more inspiring.
