Catch and Cook with BINCHOTAN

  • GOAL: Give James the tools and knowledge to catch his first fish from shore.
    REWARD: We cook the catch right there, with a very special type of charcoal, called BINCHOTAN. Binchotan is made from ubame oak (Japanese in origin), has a very consistent burn, no unpleasant odor, and the byproduct DOES NOT contain H2O (water) compared to traditional charcoal - this let's the outer layer of whatever you're cooking crisp up while retaining the juices.
    By far, this has been the best perch I've ever had. I'm happy to try this again with rockfish, or another type of fish.

    Anyone else notice that everyone has been stepping up their CnC game? Ish and Fishing Chef had that Jetty Ramen, Bay n Beyond and Outdoor Chef Life had the salt crust perch and now Philosophy D and James the mystery chef man bust out a yakitori-esque shrimp and fish cook up. West Coast RUclips anglers are killing it right now.

    Can you do me a favor ? Half Moon Bay Jetty is getting trashed from fishermen cooking on the jetty and leaving bbq coals , plastic forks , spilled food smashed onto the rocks , plastic wrappers..and foil wedged in the rocks . Can you remind them to toss coals in water when done and clean their mess . Thanks. Love your videos !

    How long did it take to cook the fish? Seemed like it took quite a while, no? The end result looked like it was worth the wait, though. What would you do differently using that type of charcoal again if anything?

    bro, who is James, where is he from? at least give us an intro! it's a false impression that hotter burning charcoal is the answer to firmer flesh. if you use the same principle that the chinese chefs use in cooking shrimp & many other seafoods, your're going to get firm meat, in fct hotter fires would only burn up the fibers & make it more mushy, you think your're getting firmer meat b/c it's extra crispy. This is the connective tissue called "collagen," a structural protein that holds together short, thick muscle fibers. In fish, muscle fibers are much shorter than they are in beef, and collagen dissolves easily during cooking. So fish cooks quickly and there's no tenderizing to do. flip flops climbing cliffs, you guys kill me!

      we, sir are thoroughly impressed by you're comment, it is obvious you are a true expert. It really grinds my gears that someone would enjoy the challenge of minimalistic catch and cooks. how dare they cook their bait also! they should be banned from youtube am I right? what's the point of even fishing if you're not catching coral trout from your luxury fishing boat and cooking it in your designer kitchen AM I RIGHT?!
