Ancient Greeks drank both red and white wines, usually the wines were sweet but not always. Almost always it was diluted with water on the basis of 3:1 water to wine.
I know that red wine was apparently more recent being invented in Greece during the 6-5th century BC. Maybe red wine was more costly and sought because of being a novelty, or maybe white wine kept the spot for being the "original" one.

Ancient Greeks kept yeast cultures active for addition to crushed grape juice, only in antiquity did they rely on natural yeast.
