Let’s bake a delicious Victoria Sandwich Cake

  • Today I am sharing a recipe for and baking one of the best known and well loved of all family cakes in the UK 🇬🇧 Prepared using the one bowl method it does away with the hassle of having to cream ingredients together and pretty much ensures success each and every time. Measurements are given for a 7-inch layer cake!
    You will need two 7-inch layer cake tins sprayed with cooking spray, the bottoms lined with grease-proof/ baking paper.
    Ingredients:
    175g (1 1/2 cups + 1 1/4 TBS) self raising flour
    175g (3/4 cup + 2TBS) caster sugar (fine granulated sugar)
    175g 3/4 cup +1/2 TBS) butter
    1 1/2 tsp baking powder
    3 large eggs
    Oven Temp. 350*F/180*C
    25 - 30 minutes
    Cake is done when golden brown and the top springs back when lightly touched
    You will also need a quantity of strawberry or raspberry jam to sandwich the layers together and either icing sugar or fine sugar to dust over top.
    Optional layer of buttercream for filling:
    125g (1/2 cup) butter
    250g (scant 2 cups) icing sugar
    1/4 tsp vanilla
    Approx. 1 TBS milk

    Hi Marie! I was so excited to see this pop up on m y feed. I've been dying to learn how to make this. I hope I can get it to turn out. We are in Albuqurque at 5k feet, baking is sometimes tricky, but I'm going to give this a go. BTW, I've tried and loved a few of the sandwiches you showed us the other day. DELICIOUS 😋

    Could you make the maple frosting cake? It was on your blog my mother used to call it the Canada cake. I think because of the maple frosting however you know it has another name like Spanish cake or something like that.

    Where are the eggs? 175 gm of whole eggs (with or without? shell)?
