hi! you should definitely go for it! im a photographer myself based in Ireland. if there is anything i can do to help your photography journey, please do let me know! it must be hard to get out there from an accessibility point of view. like you said, its a shame there isnt any gear that is built around wheelchair accessibility. maybe you could look into "rigging" a camera to your wheelchair by picking up different things you can attach to a cage that would be built around a camera. maybe you could also get a wireless touchscreen that you can connect your camera to so you can auto focus without having to bend over.
