  • The pocket watch!
    This creation is very special as it was conceived for the grand finale episode of MasterChef, Australia.
    It is composed of a double chocolate chip cookie base, a moist hazelnut coffee financier sponge, a coffee cremeux, a soft coffee vanilla caramel and a rich chocolate mousse. The whole entremet is coated in a dark chocolate mirror glaze! All the decorative elements are crafted out of dark chocolate and it’s finished with my famous sugar dome!
    This was definitely a difficult challenge for the two finalist!

    Ever since you started doing voiceovers, it's been so interesting, learning your favorite and least favorite parts of the process. I really enjoy finding out more about each piece and the inspirations or challenges behind it.

    I started watching your show on Netflix, school of chocolate. I had NO idea you had that until I started binging cooking shows and came across it, and honestly, it's amazing!! You're such a calm teacher. I love that you help them all and give advice instead of letting them fail. Not only are you a genius at making chocolate, you're the perfect teacher. 👌 💯

    So cool to see how you actually made it. I realize now, they didn't show quite a lot of the recipe on the episode yesterday, this makes the challenge even harder than I already thought.     You never cease to amaze me. Everything you create is so detailed and very well thought out. Now with the added voice over explanation makes it so much more interesting. Just imaging the mingling of the flavors and textures is blissful.

    I've always been enamored with the craftsmanship on display here, but I was also worried about what happens to the scraps when you're done. I'm very relieved that you stated that you don't throw anything away! I respect that a lot.

    I really love that this one is a voice over. After watching School of Chocolate, it's so nice to know that not only is Amaury talented and skilled in his craft, he's also an all-around wonderful person who loves what he does and loves sharing his skills and creations with others.

    My husband was flicking channels when this aired on Master Chef. Without even knowing who was on Master Chef, I saw a glimpse of the dessert challenge and said, "That looks like Amaury's work! It looks like his style!" Sure enough, it was! 😆 I would love to learn half of what you do, Amaury! I love baking, I love desserts, and I sure as hell love chocolate! 🤤😆 You're a true dessert and chocolate genius! 👍🏼
    Any chance a cookbook will come out one day? 😅

    OMG At the begining with all the baking, the caramel, the cookie.... I just fainted 😂 It looks so delicious. The result is unbelievable beautiful, yes, but I would love to try It, looks soooo good!

    Ever time I see one of his videos I also think on how long it takes him to make ever little detail and how long it took to part all the parts together on making the dessert. I love watching these videos there so satisfying to watch.
