It looks quite nice, but I think it's overcomplicated. It's like 3 different types of cheese? Quite crazy with the greens too. Spinach and peas inside, lots of green garnish on top. I'm sure it's all tasty and healthy, but can't we lose a least a part of that? Just my opinion. Especially when making Italian food. Very often less is more. Great flavours can also be achieved with less ingredients, but high quality ingredients.

I know Gordon absolutely shreds chefs who use frozen meats; when is it appropriate to freeze something, and when can it compromise the quality of a dish?
Just depends on the ingredient. Frozen shrimp come out way worse, but all tuna is frozen before consumption. Generally, when things have a crispy texture/cell structure, it's not a good idea to freeze. Ever tried frozen bell pepper (paprika) before? Peas are fine, but beans or sugar snaps are not. Raw frozen steaks aren't terrible, if frozen airtight. But Gordon especially hates frozen prepared food...and rightly so. Only freeze (certain) ingredients!
Very nice, 😃😋✨very rich and certainly an elaborate polenta recipe with all the add ons. Combined ingredients cost will be a bit dear for the average viewers but I’m sure that a few cooks watching this will be inspired to do a similary delicious polenta with or without all of them. Tenderstem broccoli to replace various vegs, omit mascarpone or aged Parmesan and use a little double cream or crème fraiche and grated hard cheese, keep everything else especially the tart goat cheese at the end. Not sure about the mint at the end, personal choice….
