Stephanie, I made your toffee to give as Christmas gifts, in particular for my BIL who said his mother made The Best toffee, so there was a lot to live up to. It (your recipe) is DELICIOUS! I made this one too! I didn't have a candy thermometer..and tried to find one everywhere, too late to order in time..sooo I remembered my Great Grandmother used to make some candy and would test it to 'hard ball stage'..and then I thought..Gee Stephanie is sooo thorough that if I follow her exact timing and temperature for cooking it will be perfect! I tried two other recipes for toffee last night. Both failed. I could not figure out what I did wrong. I followed the directions exactly. All night I tried to figure out what was wrong. I made this today, and it was delicious! Your channel has grown so much, because of your wonderful clarity and detailed instructions. This is something I never thought I can make- and so expensive to buy. Been watching so long, and every time I have made something I get rave reviews. Made your lemon tart for thanksgiving and although that crust gave me a hard time to spread- it came out perfect! Thanks for tried and true recipes.

Could you possibly use margarine instead of the butter? I am allergic to milk and dairy thus cannot have the butter! Toffee looks so delicious...Thanks for the tutorial...I really enjoy your channel...

My 3 year old daughter and I watch you all the time! We love you and your recipes😍 I have a baking related question, can I use liquid whipping cream instead of heavy cream while making ganache? (Can I put whipping cream on heat, just until it simmers, then add chocolate chips and set aside for it to sit?) we don’t have heavy cream here in Jordan so I need a substitute.
Thank you for your kind words. If you don't use heavy cream (35-40% butterfat content) the ganache would be thinner, more like a glaze.

Great toffee, just made it and after it cooled I found that it was weeping a little of the toffee and wondered what I may have done wrong... I was going to put it in some after Christmas thank you gifts and think it will stick together when packaged... any ideas? Its so good it won't go to waste, I just need to make some more.
This can happen for a few reasons. Did you use a heavy bottomed pot? You don't want to use a thin bottomed pot because it doesn't conduct the heat very well and you can get "hot spots". Also, when melting the butter and sugar maybe try turning down the heat a little so they melt together more slowly as you don't want abrupt temperature changes. And stir the butter and sugar often to make sure they are well mixed and the sugar is completely dissolved. Also, as the sugar syrup is cooking, swirl the pot a little more to make sure everything is mixed together.
@@joyofbaking I did use a heavy bottom pan and swirl the mixture... maybe it didn't get up to temperature due to the old candy thermometer I was using, it was starting to get brown so I was worried it would burn or maybe because the butter was melted before the sugar was added with not enough time for all of the water to evaporate... I'll try again... It taste great more for me LOL

I bought the same pastry brush at Sur la Table...after a time, whenever I would use it, one or two bristles would remain on the sheet so I began using silicone brushes...much better..don’t want to bite into a bristle.
Can I leave out the corn syrup? P.S. your cocoa brwnies are the best with raspberries😍

It is a Caso induction cooktop.

12/7/19 Looks great, my Daughter loves Toffee.....I prefer peanut brittle....so giving her this recipe so she can make her own.... where does this Lady live, does anyone know? She always gives measurements for U.S.A. & I'm assuming for the U.P. !! I love it, but she talks a bit too fast....I love her cooking channel , her kitchen is always so clean, never see any dirty dishes around....when I cook, I swear seems I dirty ever dish in the kitchen.....she is the perfect cook.....

@@joyofbaking Fox Terriers are great! So happy to hear you have a new addition to your family. Have you had a Welsh Terrier? They look like mini Airedales. We had one named Jovie and she had personality plus but was the most strong-willed terrier we've ever had. We've had schnauzers, Yorkies, Airedales and Jack Russell. Our beloved pets live too short lives. Your holidays will be merrier with a wire fox terrier! I will be looking forward to meeting Carrie. Merry Christmas! PS. I love your videos and recipes, too.
We were debating whether to get a Welsh Terrier, Wire Fox Terrier, or a Schnauzer. I had a miniature Schnauzer when I was young. Never had a Welsh. But we decided on Carrie. She is 2 years old and already trained. And what a joy she is. Like Baxter, she has so much personality.
