TECHNICAL CHALLENGE RECIPE (Have a go and test your skills)
They should consist of a buttery biscuit base with a mint cream filling coated in tempered chocolate.
You have 2 hours to complete this challenge. Next to you I have kindly provided a thermometer, you’ll need it.
INGREDIENTS
55g caster sugar
200g plain flour
187g unsalted butter
2 1/2 cups icing sugar
2 tablespoons heavy cream
Peppermint extract
350g dark chocolate
20g milk chocolate
INSTRUCTIONS
1. Make biscuit dough
2. Roll out and chill
3. Make peppermint cream and chill to firm up
4. Use 5cm round cutter and stamp out 12 biscuits
5. Bake
6. For the chocolate coating temper the dark chocolate
7. Dip base of cooled biscuit into chocolate and place chocolate side up
8. When hardened, flip over, place a smaller circle of peppermint cream in the middle and then coat the top in chocolate until it’s covered
9. Drizzle milk chocolate ribbons
