    Join me this week to recreate the Week 2 TECHNICAL BAKE CHALLENGE 🍪

    TECHNICAL CHALLENGE RECIPE (Have a go and test your skills)
    They should consist of a buttery biscuit base with a mint cream filling coated in tempered chocolate.
    You have 2 hours to complete this challenge. Next to you I have kindly provided a thermometer, you’ll need it.
    INGREDIENTS
    55g caster sugar
    200g plain flour
    187g unsalted butter
    2 1/2 cups icing sugar
    2 tablespoons heavy cream
    Peppermint extract
    350g dark chocolate
    20g milk chocolate
    INSTRUCTIONS
    1.⁠ ⁠Make biscuit dough
    2.⁠ ⁠⁠Roll out and chill
    3.⁠ ⁠⁠Make peppermint cream and chill to firm up
    4.⁠ ⁠⁠Use 5cm round cutter and stamp out 12 biscuits
    5.⁠ ⁠⁠Bake
    6.⁠ ⁠⁠For the chocolate coating temper the dark chocolate
    7.⁠ ⁠⁠Dip base of cooled biscuit into chocolate and place chocolate side up
    8.⁠ ⁠⁠When hardened, flip over, place a smaller circle of peppermint cream in the middle and then coat the top in chocolate until it’s covered
    9.⁠ ⁠⁠Drizzle milk chocolate ribbons
