Wow. This cake is absolutely delicious! I made it today, and my parents have already eaten half... it is extremely light and fluffy, but not dry at all! I did change up the recipe a tiny bit, but it didn’t really affect the end product that much. Instead of a buttercream, I made a whipped cream topping, consisting of 150g whipping cream and 30g of powdered sugar. I also made the pandan juice more condensed, by using 4 pandan leaves instead of 2 and using 80ml of water to dilute it instead. When I make it next time, I will probably use 65ml of water and increase the pandan leaves even more, as our family really like a strong pandan taste. I definitely definitely recommend to all the pandan lovers out there! Also, I recommend making the whipped cream frosting instead for a lighter cake, more suitable for the summer. (This also means you can eat more slices in one go, as it’s not too rich!) Thank you again Katherine Kwa, for giving me this wonderful recipe. I love pandan so much! :) pro tip: for crazy pandan lovers like me, I use both pandan juice (which I usually actually reduce down, to lessen the water content of it) and pandan flavoring :0 sorry for any purists that may find this sacrilegious, but its great! Really craving this cake now... :’))
