I’d loved to lived like the Amish! Had plans to be close with them! Which heirloom wheat, yes! Where they have a good thing! I could use a couple thousand acres, with a spring fed creek that runs even in droughts from a hilltop would be ideal! Sheep, goats, turkeys, ducks. Trees and vines, etc. Which may be too late to enjoy, but getting initially established is the priority, where I think there’s some down to earth folks deep in faith who would love such an establishment, where folks would need to be humble true enough! Something like monastic/skete!
Easy to make your own, lots of videos out there... even if u get a special sourdough, like San Francisco..it will eventually pick up yeasts from your environment and become your own.
I live in Lancaster county, PA. Amish women have NO IDEA how to make sourdough bread. Very few of them know but all of them make the same mistakes. Their sourdough bread is very light and looks strange because they use the worst and cheapest flour. They ask me how make sourdough bread and ghee. It makes me lough because they have dealt with cows for almost 300 years and still don't know how to preserve butter.
I remember very very long time ago i fell in love to a amish woman and this amish woman had a pet piglet the only 1 with the squigly tail still intact if i remember correctly the butcher(prolly her father) said if i remember the pig i can have the woman and made a promise i wont forget and he insist i will and he right i forgot the whole thing cuz couple of years passed by and when we visit the farm again for some reason i chose the squigly tailed pig to be butchered, with the grin, the butcher ask if im sure and i said yes cuz it looks special very big looks super yummy and cuz its the only 1 with the squigly tail perfect for my birthday so then the the pig was shot and butchered, on our way to get back home to make special dinakdakan(filipino cusine) i saw a woman crying and i just remember everything and get strucked with heavy guilt and remorse from choice i made but now moving on i thought about hey i remember that means i still get a chance to have the woman, we will just raise another pig with squigly tail perhaps?
To romantic. By the way, the dry yeast is produced only by the modern industry. A dough that deservers such comments must be leaven with sourdough or barm and never with industrial yeast.

Where did you make the wood fire/oven? With having a smoke alarm next to a wood fire or oven...?

Why would you need electricity to bake bread? I have both a wood fired cob oven and a propane stove. I make bread all the time.
