Cooking 6 Briskets On 250 Gallon Offset Smoker

  • Short clip of a brisket cook I did last weekend. This is about halfway, around 6 hours in. I ran my temp around 250 the first 3 hours, 260 the next 3 hours, 275 until wrap, and 300 to finish (around 2 hours). I used about 23 splits of locally sourced almond wood as fuel for the whole cook.

    Just discovered your channel. Sweet smoker. I’m also in the east Bay Area (Martinez, CA). Glad to see other bbq fanatics in the east bay. Have a Lone Star Grillz cabinet but if I had to do it again, would prefer a propane tank smoker. Do you mind me asking where you get your meats? Having a hard time finding beef short ribs. Would love to go to your next pop-up.

      I get the plate ribs at Restaurant Depot. There's one that just opened in Concord by Highway 4. Costco also have some chuck short ribs too. Thanks for stopping by!

    Looks great. How much hotter is it at firebox side? I'm guessing the first foot or so might be a good place to do chicken or Babyback ribs while doing brisket and pulled pork the rest of the way. Just curious, I'm thinking about getting a 500 gallon eventually. Have a great day 🌤.

      The first foot or so near the firebox exchange is scorching hot, as you can see by the different "burnt" color on the grate. It's basically like a direct heat grill there. That's where I sear my steaks or anything I want a char on. Not usable for smoking meats though. Thanks for stopping by Victor!

    Did the water pan holder come with the pit or was it extra? What meat probes are those? Thanks

      Yes it did. That's the track for the upper grate. Just so happens it's a perfect spot to hold the water pans. I use the Thermoworks Smoke X4 digital probes. Thanks

    Sweet pit man! Those briskets are looking nice. Do those water pans make a difference in a smoker that big?

      Thanks Joe! I would say yeah. It helps with moisture on long cooks like brisket. I don't use them on shorter cooks like chicken/sausage.

      Do you think adding a baffle plate at the opening of the firebox into the cooking chamber will make a difference?

      @@joekerrytorres3027 Yes, I think it will. In my opinion though, it is not needed. It will only deflect the heat and push it more inside, instead of going straight up out of the FB. You will end up with more hot spot area, as opposed to, for example on mine just a foot or so near the FB.

    I am looking into getting a 250. I need to be able to cook 10 briskets at 1 time is that big enough to do this?

      You can if you get top racks and depending on the top clearance of your pit also.

      You can if you get top racks. The bottom only fits 9. I wouldn't cook briskets on the top tho, it gets way too hot. At least on this cooker.

    Just noticed the water pans. Don’t think you’ve ever mentioned them before. They come with the smoker or somn you added?
    Anything you would do different if you could do it again? I’m considering picking one up from Phil.
    Last, what’s your average split burn rate over say 8hr cook?
    Briskets look beautiful btw!

      I added the water pans myself. They're just Half & Quarter sized steam pans that can hang perfectly on the track for my upper grate on one side and the other side just rest on top of the FB inlet.
      I probably won't change anything with this build. I'm pretty happy with what I got.
      So every 5 splits last me about 3-4 hours depending on their sizes. I use about 20-23 splits for a brisket cook (12-14 hours).
