Cooking Select Grade Brisket on the 250 Offset
Просмотров 6 тыс.Год назад
USDA Select grade is the lowest you can find for beef here in the US. Most people don't even want to touch it fearing the inferiority it can produce when you cook them. While it's true for cooking steaks and other fast cooking methods, smoking brisket is on a different dimension. How will it fare?

Просмотров 17 тыс.2 года назад
Wrapping brisket to finish the cook seems to be the norm almost everywhere. What about not wrapping at all during the whole cook? This is how the current #1 BBQ joint in Texas do their brisket. I really like this method, and this is my interpretation of it. Thanks for watching!

Cooking 6 Briskets On 250 Gallon Offset Smoker
Просмотров 11 тыс.2 года назад
Short clip of a brisket cook I did last weekend. This is about halfway, around 6 hours in. I ran my temp around 250 the first 3 hours, 260 the next 3 hours, 275 until wrap, and 300 to finish (around 2 hours). I used about 23 splits of locally sourced almond wood as fuel for the whole cook.

How To Make Beef Tallow From Brisket Fat
Просмотров 5 тыс.3 года назад
Instead of throwing away your brisket trimmings, turn them into beef tallow. This way you can store it longer and re-use it as an oil option for high-heat cooking. Tallow is also more flavorful than regular cooking oil and offers some health benefits such as boosting your immune health. What To Do With Your Brisket Trimmings - Do Not Throw Away
Просмотров 17 тыс.3 года назад
This is what I do with my brisket trimmings. You will end up with about 20-30% of trimmings when you try to shape your brisket in a way that it will cook the best.. That's a lot of meat & fat to just discard. Old Country BBQ Pits Smoker Modifications - Pecos & Wrangler 2
You ain’t gotta lie you know the foil method was the better one😂😂😂
How expensive is the BBQ Pit and from where is it.
Hello, I'm just wondering why did you select halal meat over regular meat?
We need a new video. How is business going
Just stumbled across your videos, hope you start back uploading as you made some quality content!
Thats a rip off. For what you paid for that thing im sure they could have made your grates fit all the way across and a digital thermometer holder
Is the 12 in stack extension sufficient enough?
Would you post the website for the extra racks and the ask rake?
What is the tickness of the insulation
Mustard and pickle juice will not add flavor. Save yourself some money.. Use a spray bottle, filled with water. All you're trying to do and accomplish is to get the seasonings to stick and adhere to the meat.
Came here to say they used all of your mods in the newest versions of their smokers!
Did you have your oven on during rest?
Damn bro, scraping that good stuff off is a sin.... J/S
What is the cost of something like that
Good luck
haha, your daughter quietly prompting "subscribe?" cracked me up. edit: i hope i get to the point where i can't decide which i make better, paper or foil wrapped
Love your videos! In the market for a commercial smoker. Would the 500 support a small bbq business?
I went this weekend I want to go back next
No more videos
Briscuit
Not big at all, I have this in my apartment!
Dimensions of firebox
What are the dimensions of the firebox on the 250 gallon.
After a year and with your shop open. Do you prefer foil rest or butcher ?
you can also mix your beef tallow with herbs and spices for easy seasoning when frying food make sure your seasonings are extremely fine though like powder consistency you can use a spice grinder or mortar and pastel lastly use a 1 to 3 ratio of seasonings to beef tallow and mix thoroughly after the tallow has solidified so that when you scoop out some its well mixed
I go to the Bay Area once a year... I'm coming by to support you this winter! thanks for helping me decide on getting a 250 gal smoker with your content.
@@user-hf8wl4fg4n Of course! Cannot wait to serve you! Thanks
Trimming brisket should be a crime
@@elgallodeojinaga6909 Why is that?
Why u need blocking logs if ur far from fire?
Hey Fik, New sub here, what internal temp were briskets when you took them out of the warmer after 13 hr rest?
I’ve paused the vid at 1:47 to comment; your background music is not necessary. This may encounter some pushback but you seem like a great person. I’ve been watching Joe Yim’s “the Mighty Joe Yim’s” vids & they are terrific.
I just bought a brisket for $3.10/lb.
Great video and awesome mods. Are you using regular bricks or fire rated bricks?
I see your cold-smoke reels on Instagram and would be interested in a full length video about the process. Can't wait to visit your restaurant soon!
Been watching your videos for some time now. Happy to see you opening up your very own spot!!! Congratulations! Sending you many blessings all the way from San Antonio!
what temp gauge do i need for wrangler smoker?
Did you look at m&m smokers? If you did why didn't you go with them?
Fik, all of the detailed info on weights, yields, cook times, wood consumption, etc., is so helpful - thanks man! Just put in my order for a Big Phil 250 and will end up having a 24"/100 gallon offset and the 250 for my cooks - pretty much the setup you demonstrated here. Your channel is a great reference.
Fik, look forward to seeing your video on the new 1000 gallons smoker. Best BBQ in Bay Area.
That's lame about the neighbors complaining. Who the hell doesn't like the smell of a smoker running?
Any regrets on the 500gallon, can you do a second review video on this Pitt
I build. I'm not building a smoker for the backyard. It's not "My" backyard. If you know what I mean. I just might have unwanted company. I like the set up though! Perfect.
Hell yeah dude!!! I wish I'd known. I JUST got Cali. I will go next time!!!
You just need to be spraying for smoker down with some pam every so often. That will keep the surface rust resistant.
Should have got a reverse flow bro👎
Why?
Any idea what font he did your name in on the firebox ?
I do not. Maybe you can hit up Big Phil on instagram and check with him.
Congratulations! Been watching your videos for a while.
Congratulations bro wishing you nothing but success
What about the paper was better? Was foil boat too smokey?
Congrats, my dude...been watching you for a while now, glad to see you doing well and have a BBQ place
