Cooking Select Grade Brisket on the 250 Offset

USDA Select grade is the lowest you can find for beef here in the US. Most people don't even want to touch it fearing the inferiority it can produce when you cook them. While it's true for cooking steaks and other fast cooking methods, smoking brisket is on a different dimension. How will it fare?

Wrapping brisket to finish the cook seems to be the norm almost everywhere. What about not wrapping at all during the whole cook? This is how the current #1 BBQ joint in Texas do their brisket. I really like this method, and this is my interpretation of it. Thanks for watching!

Short clip of a brisket cook I did last weekend. This is about halfway, around 6 hours in. I ran my temp around 250 the first 3 hours, 260 the next 3 hours, 275 until wrap, and 300 to finish (around 2 hours). I used about 23 splits of locally sourced almond wood as fuel for the whole cook.

Fik, all of the detailed info on weights, yields, cook times, wood consumption, etc., is so helpful - thanks man! Just put in my order for a Big Phil 250 and will end up having a 24"/100 gallon offset and the 250 for my cooks - pretty much the setup you demonstrated here. Your channel is a great reference.

You just need to be spraying for smoker down with some pam every so often. That will keep the surface rust resistant.
