How to make vegan Dumplings, Gyoza, Chinese Potstickers recipe 餃子 | ぎょうざ

  • LAY HO MA everyone! Name one person you know who doesn't like dumplings! Try these absolutely delicious dumplings with the most amazing potsticker sauce - which I will teach you in this episode. Join me and learn how to make vegan gyoza dumplings or Chinese potstickers( 餃子 | ぎょうざ)!
    Ingredients:
    WRAPPERS:
    1/2 cup water
    1 cup flour
    salt
    FILLING:
    1 cup diced napa cabbage
    3/4 cup diced shiitake
    1/2 cup gai lan (Chinese broccoli)
    2 tbsp minced garlic
    DIPPING SAUCE:
    2 tbsp soy sauce
    1 tbsp vinegar
    1 tsp sesame oil
    1/2 tbsp grated ginger
    1 tbsp chopped green onions
    Directions:
    1. Bring 1/2 cup of water to boil
    2. Add 1 cup of flour to a large mixing bowl
    3. Season with some salt
    4. Pour in the hot water and combine well
    5. Knead the dough further for a few minutes
    6. Roll the dough and cut into 2 portions. Then roll a little further
    7. Divide into roughly 1 inch squares
    8. Roll the dough piece into a ball with your hands
    9. Flatten the dough using some flour to prevent it from sticking
    10. Use a rolling pin to try to roll the dough thin (IMPORTANT - don't place the wrappers on top of each other for too long or they will start to stick together!) (ALSO IMPORTANT - remember, thinner wrappers and more filling mean less dough taste in the final product)
    11. In another mixing bowl, add your garlic, shiitake (discard the stalks), gai lan, cabbage, and mix to combine
    12. Fill the dumpling with about 1.5 to 2 tbsp of filling and line one half of the wrapper with water to seal
    13. Crimp the wrapper while closing to give it a nicer look!
    14. Heat a sauté pan on medium high and add olive oil
    15. Wait until the oil is hot, and place in your dumplings (IMPORTANT - move the dumpling around a little to prevent them from sticking to the pan)
    16. Sear the dumplings for about 30 seconds, then pour in 1 cup of water and place the lid on immediately
    17. Let the dumplings steam for 10min
    18. Make your dipping sauce by combining the vinegar, soy sauce, sesame oil, ginger, green onions, and black sesame seeds
    19. When the dumplings are cooked, serve and enjoy (they are VERY hot! Be careful!)

      Almost what you do except we fry the shiitake before mixing, and has fried carrots and tofu. Also Chinese chives instead of garlic. You napa has too much water content inside so it would only work fried, not boiled, the filling would be more firm if you marinate them in salt a bit and drain out the excess water. Also adding some glass noodles would help bind the filling too but its optional.

    I just made these and they were great. Biggest learning curve was sealing and crimping the dumplings but I got the hang of it. Thanks so much for inspiring and teaching me. Also, my wife thinks I'm a genius!

    Oh man, the sauce!! I remember eating those in a traditional chinese restaurant in Boston, never to find anywhere else, or replicate at home the flavor in the sauce. After following your recipe, it was spot on! I love this sauce so much, I used apple vinegar and it was delicious! Thank you for the recipe.

      @@shewit7227 It was on 55 Beach Street, Chinatown, Gourmet China House. Went there with my friends, we ordered maybe 8 different dishes. The food is incredible! I think I ate almost 20 dumplings hahahaha they were so good. They have a good selection of vegetarian dishes there. Wil's recipe was spot on! I was able to replicate the flavor almost as good as the restaurant,

    Those look SO good! I'm going to try these tonight.
    Addendum: Made them and loved them. Warning, they are very labour intensive. I think I may consider using packaged wrappers next time just to speed things along. One thing I did find is that the flour-water mix was a bit wet. I added more flour at several points along the way and still found it to be fairly sticky. I bake a fair bit of bread and I quickly found when handling dough that weight is the best way to measure ingredients. If I were to make this flour wrapper mix again I would use the same amount of flour (1 cup = 120 g) but I would start with just 65 grams of water (65 ml.) and add more water only if necessary. The filling:wrapper ratio worked out fairly well.

    Wil Yeung, culinary superhero. I can't sing your praises enough. This is the recipe I've been looking for too. A Chinese culinary staple. My ex-wife's from Honk Kong and dumplings were a staple food in our household. Paradise isn't meant to last forever and sadly neither was our marriage, but the 18 years of experiencing Chinese dishes I'll take with me in my heart forever. Watching your channel these past few weeks has been helping me relearn to make some of those old staples again. Replacing meat with more healthy plant based ingredients. You're teaching this old dog some new tricks. Helping to return some joy to someone's life at the same time. Just know that your cooking is able to do that for another person. It's doing that for me.     100% Yesterday, I was on a walk and I was brought to tears at how beautiful creation is, and how I so much of my life just trying to get to the next thing or using experiences as a means to an end of some sort. I stopped and reflected that "Creation is for admiration; I am the experience and experiencer of creation. Admiring the whole of nature/creation is admiration for the self!"     Thank you for this recipe, the wrappers were perfection. I cheated and used my lasagne maker to roll out sheets and then cut them in circles. The cooking method was also very simple, I did them in two batches and used half a cup water each for 10minutes, super yum. Thanks again for sharing 🌸

    If you are really in a hurry. Many grocery changes have pre made vegan dumpling wraps in the vegetarian section. Buy a dumpling press, they re Cheap on amazon. Prep your fillings in advance if you want. Stuff, press, and cook as seen here, then boom! Yummy.

    dude, I seriously love your videos.     Made these tonight for dinner. Got 21 dumplings from the dough, and yes, I ate them all! I added a red chilli pepper to the filling. Nice. Ha thanks Wil great recipe

    So just tried this, the dipping sauce is AMAZING!! . You make that folding technique look so easy. Mine weren't presentable but they sure were tasty!! 😋

      be sure to make the sauce - I didn't season the dumpling filling because the sauce is pretty strong :) ur the best!!!

    Took me four hours to cook these for the first time (for six people). My dumpling sealing skills are really NOT good, but they tasted amazing!!! Will keep practicing, thanks :)
