Ingredients:
WRAPPERS:
1/2 cup water
1 cup flour
salt
FILLING:
1 cup diced napa cabbage
3/4 cup diced shiitake
1/2 cup gai lan (Chinese broccoli)
2 tbsp minced garlic
DIPPING SAUCE:
2 tbsp soy sauce
1 tbsp vinegar
1 tsp sesame oil
1/2 tbsp grated ginger
1 tbsp chopped green onions
Directions:
1. Bring 1/2 cup of water to boil
2. Add 1 cup of flour to a large mixing bowl
3. Season with some salt
4. Pour in the hot water and combine well
5. Knead the dough further for a few minutes
6. Roll the dough and cut into 2 portions. Then roll a little further
7. Divide into roughly 1 inch squares
8. Roll the dough piece into a ball with your hands
9. Flatten the dough using some flour to prevent it from sticking
10. Use a rolling pin to try to roll the dough thin (IMPORTANT - don't place the wrappers on top of each other for too long or they will start to stick together!) (ALSO IMPORTANT - remember, thinner wrappers and more filling mean less dough taste in the final product)
11. In another mixing bowl, add your garlic, shiitake (discard the stalks), gai lan, cabbage, and mix to combine
12. Fill the dumpling with about 1.5 to 2 tbsp of filling and line one half of the wrapper with water to seal
13. Crimp the wrapper while closing to give it a nicer look!
14. Heat a sauté pan on medium high and add olive oil
15. Wait until the oil is hot, and place in your dumplings (IMPORTANT - move the dumpling around a little to prevent them from sticking to the pan)
16. Sear the dumplings for about 30 seconds, then pour in 1 cup of water and place the lid on immediately
17. Let the dumplings steam for 10min
18. Make your dipping sauce by combining the vinegar, soy sauce, sesame oil, ginger, green onions, and black sesame seeds
19. When the dumplings are cooked, serve and enjoy (they are VERY hot! Be careful!)

LAY HO MA everyone! Chinese New Year is almost here - GUNG HAY FAT CHOY!! Have you tried making dumplings before? What did you put in the filling? Comment below and let us know!
LOVE that rolling pin! Where did you get it?
I love basil and tofu in mine.
There's no salt used for filling or sauce!🙄 Did you forget to add or salt is not used in this recipe??🤔🤔
Wow 🤩 Amazing delicious recipe, thank you Wil ! I love Gyoza 😋 Can I use whole wheat flour instead of white flour, does it work??
Almost what you do except we fry the shiitake before mixing, and has fried carrots and tofu. Also Chinese chives instead of garlic. You napa has too much water content inside so it would only work fried, not boiled, the filling would be more firm if you marinate them in salt a bit and drain out the excess water. Also adding some glass noodles would help bind the filling too but its optional.
"Take a moment to admire your creation" hah yes!! We need to do that more often. Fantastic recipe, as always! :)
Annaliese D lol glad you appreciated that 🙃
Utube is not ban in CCP?
Good to admire your work. ;))

I've done that a thousand times with home building tasks. Now I'm doing it with vegan cooking... lol
I do that after I take shit
I just made these and they were great. Biggest learning curve was sealing and crimping the dumplings but I got the hang of it. Thanks so much for inspiring and teaching me. Also, my wife thinks I'm a genius!
Yaaass 😎👌🏻
Take a moment to admire your creation and I want to admire you...your so professional and your videos are so good and what I love about you the most....is no unnecessary talk....bullseye to the point. I love you and what you do and the way you do it. Admiration for a truly good teacher.Thank you.
Yes, what you said. 😊
Ditto! Great admiration!
Subscribed. Best vegan cooking channel. Is it just me or is listening to that voice as delicious to the ear as the food is to the eye?
😅
Oh man, the sauce!! I remember eating those in a traditional chinese restaurant in Boston, never to find anywhere else, or replicate at home the flavor in the sauce. After following your recipe, it was spot on! I love this sauce so much, I used apple vinegar and it was delicious! Thank you for the recipe.
Hehe it really is a delicious sauce and yet it’s so simple right?!! 👨🍳🙌👌🥰
I usually have a sweet-chilli sauce with my dumplings but this looks fab and super easy
Which restaurant in Boston?
@@shewit7227 It was on 55 Beach Street, Chinatown, Gourmet China House. Went there with my friends, we ordered maybe 8 different dishes. The food is incredible! I think I ate almost 20 dumplings hahahaha they were so good. They have a good selection of vegetarian dishes there. Wil's recipe was spot on! I was able to replicate the flavor almost as good as the restaurant,
“Take a moment to admire your creation...”
This is why we keep coming back.
Lovely.
Glad you’re here 🥳
Love that rolling pin! I really like when they keep the beautiful patterns of the wood in the wood work ❤️🌲
thank you!! its one of my prized pieces for sure - its all one piece Italian olive wood made by @legnoart
@@YEUNGMANCOOKING Do you by any chance still know where you got your mortar and pestle? I've been looking for the perfect one for over 10 years at this point. They're all either too smooth, not the right material or shape... Yours looks great.
Yeung, you really do rock. Of the highest awards i can give such an excellent cuisine chef.
This is truly the future of cooking videos. Simple, confident, delicious! Thank you, Wil!
🥳
A couple days ago I made dumplings with tofu. They were great. Easy to make and very tasty.
My 22nd day of being vegan - Gyoza Time :D
Man, this channel is amazing :)
🥳🙌🏻👨🏻🍳
I could eat gyoza all day and night... every day! Wil, you are amazing! I’m so happy I found your channel. I’m pretty sure God took a moment to admire His creation when He created you! You’re a great symbol of proper veganism!
So glad you’re here 🥳
Take a moment to admire your creation. I love that.
Indeed easier than I thought, didn’t know we could used uncooked fillings 👍🏻👍🏻. My absolute favorite food...Mouthwatering!
Those look SO good! I'm going to try these tonight.
Addendum: Made them and loved them. Warning, they are very labour intensive. I think I may consider using packaged wrappers next time just to speed things along. One thing I did find is that the flour-water mix was a bit wet. I added more flour at several points along the way and still found it to be fairly sticky. I bake a fair bit of bread and I quickly found when handling dough that weight is the best way to measure ingredients. If I were to make this flour wrapper mix again I would use the same amount of flour (1 cup = 120 g) but I would start with just 65 grams of water (65 ml.) and add more water only if necessary. The filling:wrapper ratio worked out fairly well.
'take a moment to admire your creation...' love your attitude ;)
Thank you 👨🏻🍳🙌🏻
Wasn't paying attention to who made this video when I clicked on it, but I IMMEDIATELY recognized that awesome voice of yours, so I watched it to the very very end!! Thank you!

Thank you so much Ericka ☺️great vibes from Canada 🇨🇦
Bro I loved your last message.
You said the more care you put into your dumplings is the more they care for you. Translated to: the more you give the more you recieve.
Great vege dumpling recipe ! Homemade is best so healthy & nutritious way to incorporate veges into ones diet. A good video shows great techniques anyone passionate about good healthy eating & cooking will enjoy this meal 👍 ❤

Im loving these videos, I cant believe Im just now finding them. thank u
The way u present ur recipe..makes it more interesting..u r a wizard
THUMBS UP! DUMPLINGS look AMAZING but must say YOU have the PATIENCE of a SAINT.
Wil Yeung, culinary superhero. I can't sing your praises enough. This is the recipe I've been looking for too. A Chinese culinary staple. My ex-wife's from Honk Kong and dumplings were a staple food in our household. Paradise isn't meant to last forever and sadly neither was our marriage, but the 18 years of experiencing Chinese dishes I'll take with me in my heart forever. Watching your channel these past few weeks has been helping me relearn to make some of those old staples again. Replacing meat with more healthy plant based ingredients. You're teaching this old dog some new tricks. Helping to return some joy to someone's life at the same time. Just know that your cooking is able to do that for another person. It's doing that for me. Thanks.
Oh wow! It’s great to hear you are enjoying and that these dishes are bringing you joy. It’s a pleasure to be cooking together 🙌🏻
Best step....take a moment to admire your creation !
So much work right 😅😅😅
Wil Yeung - Cook With Confidence I have been vegetarian for nearly 3 years now and I Cook most of my stuff. I tried your recipe yesterday and it was really good. I substituted the Napa cabbage to just the regular cabbage...no Napa left...made Kimchi the other day lol Thank you man. I subscribed as well.
Lay ho ma!!!
We love your videos! ❤️
We are die hard gyoza fans, but didn’t think of a vegan version! ✨ Will try this recipe!
100% Yesterday, I was on a walk and I was brought to tears at how beautiful creation is, and how I so much of my life just trying to get to the next thing or using experiences as a means to an end of some sort. I stopped and reflected that "Creation is for admiration; I am the experience and experiencer of creation. Admiring the whole of nature/creation is admiration for the self!" This is the greatest form of self love- seeing one's self as part and parcel of the totality of creation. Today, your video came up in my suggestions for some reason. I subscribed! Also, I've never seen dumplings made so easily! This recipe is on the list of things to try for sure! Thank You! Om Shanti
Wow!! Lovely recipe with simple to find ingredients. Will definitely try it
"Take a moment to admire your creation" that's was special.
Just noticed someone else said that below, haha. Great!! Looks like a few special people here.

I like the way u made the dumplings wrapping without fuss, no need to measure, nothing...easy! KONG HEI FATT CHOY! May your channel roar in the year of the Tiger!
🎉🎉🎉
Thank you for this recipe, the wrappers were perfection. I cheated and used my lasagne maker to roll out sheets and then cut them in circles. The cooking method was also very simple, I did them in two batches and used half a cup water each for 10minutes, super yum. Thanks again for sharing 🌸
All good 🥳🙌🏻👌🏻
I just made these! SO SIMPLE and SOOO GOOOD!!! I felt like a Rockstar. 12/10 TOTALLY WORTH IT!!! This is my first time making dumplings, and I feel so great about this experience! THANK YOU, Wil. OM

Loved, "Take a moment to admire your creation"
Your channel is great. We don't eat out anymore, so knowing how to make awesome stuff at home is imperative. You're helping. :) Thanks, man. Also want to echo everyone else by saying that I appreciate the sparse talking. Everything looks beautiful. No need for blabbing.
Edited for typo.
Glad you’re here ☺️
Accidently came across your channel, amazing thanks
Love it 🥳 welcome! Glad you’re here
If you are into food and enlightenment together, this is the right video for you 🥰
I’ve made it yesterday. It’s really delicious 😋 I’ve substituted the Chinese broccoli with spring onion because it’s not available here in KSA
I’ve always wanted to be cared for by a dumpling. Yummm. That looks like an olive wood rolling pin. It looks like my olive wood mortar and pestle.
Haha so do I 😅 and yes!! It is olive wood it’s beautiful 😇
hahah
Thank you! I've been looking for how to make dumplings properly for a very long time. Beautifully done. 🤗😁😀

I love the way you cut the b/s talk . ❤
If you are really in a hurry. Many grocery changes have pre made vegan dumpling wraps in the vegetarian section. Buy a dumpling press, they re Cheap on amazon. Prep your fillings in advance if you want. Stuff, press, and cook as seen here, then boom! Yummy.
These look amazing and worth the effort. On another note, you need a kitchen tour. That rolling pin was beautiful!
Lol 😅 it really is very pretty isn’t it lol. I bought one for a friend of mine cause she also really liked it 🙌👨🍳

Chef your videos are really outstanding.Have been following but after seeing this video I'm assured they are really small packages of tutorial. How clearly you have shown the folding process which most chefs do not share.
Keep sharing nice indo Chinese fusion ideas.

Thank you so much! LOL I love to eat a lot too :D
Hello sir - great recipe!
Love your methodology and simple explanations.
Can you just clarify 2 things:
1. What flour (all purpose, wheat, rice)?
2. What vinegar? Your looks dark. Is it balsamic, rice vinegar or something else?
Thanks again!
I really like your channel, Wil! Great production value. Awesome recipes, too!
