It always warms my heart to see fathers who cook. My father has never cooked and always treated us as basically maids or wait staff who have to do literally everything for him, so it's wonderful to see a father who's not only passionate about cooking but also making wonderful food to share with the ones he cares about.
In fact, in a lot of chinese families, the dad is pretty often a better cook than the mom, given that a lot of previous generation chinese migrants were working mostly as chefs in restaurants, and most of the chefs were men. Sorry for your familial situation. Hopefully if you find some chinese friends, you'd eventually get to hang out with their families and they treat you to a home cooked diner.

thats basically male chauvinism my dad, a taiwanese, also kindda but at least he like to cook he had a pretty good point about it you gotta take care of everything all by yourself at some point in life so know how to cook is definitely important

This dish has got to be my favourite childhood memories of growing up in Hong Kong. There used to be an old couple who will sell them on the street and is impossible to walk past without getting some. Uncle Lau reminds me of my late father, who loved to cook and watching Uncle Lau is just like watching my late Dad. Such fond memories. Thank you Lau family for making these videos so that younger generations can learn to cook them too.

This was a huge hit with my family. I browned them all over in the pan and they were they best we’ve ever eaten. I did add a little garlic, onion, and slivers of carrot to my filing. I made the wonton recipe also a few weeks ago as well.and you do an amazing job of breaking down the steps so that the recipe does come out successfully for the home chefs. I look forward to more recipes and videos.

I like Daddy Lau's method of cooking potstickers. Pretty much every recipe I've come across for potstickers, the instructions are to get the bottoms golden brown, then add water and put a lid on it as fast as you can to avoid getting burned from the oil/water reaction. This way seems so much safer and it looks like they still come out really crispy!

Pot stickers, dumplings..if it’s delicious filling wrapped in a dough…I think it just might the one universal food that so many millions, heck billions of people adore. I’ve never had a bad one! It’s universal to humanity, but I think the Chinese have some of the best 🥰🥰🥰 Perogi is pretty amazing, gyoza is addictive. So, I think it’s one food that everyone can love with ease. Your Mom is a pro at her wrapping, too! I’ve gotten hooked on your videos, your family is so wholesome and everyone seems so sweet. Your parents are so cute together. these were absolutely incredible!!! soooooooooo much tastier than what i buy in restaurants because i could adjust the amount of garlic , ginger and chill. I like spice, so i made it really spicy and i eat this with black vinegar and chilli oil
Daddy Lau makes mincing chicken look so easy! Ok, I feel brave enough to try this. I find that store bought ground chicken or ground pork is often way too dry and lean so my dumplings are soooo dry. Maybe mincing my own thighs will help with juiciness. I love seeing Mommy Lau cook! Yay!

My first memory of pot stickers was when I was in kindergarten. One day my dad came home late from working overtime, and he brought home a set of pot stickers along his commute. It was crispy with char bottom and full of meat flavors. A drop of oil dripped on my homework and the paper turn from white to transparent. It was the coolest pot stickers memory to this day for me.

I made these dumplings for CNY and used my kitchen aid for fool proof and it worked beautifully. So flavorful. Even kid approved. Thanks! This is the 5th recipe I’ve tried and I really appreciate the steps and explanation. I’m ABC so I always feel I know only half or things so thank you!
Huh, this is really interesting. Most cooking methods I've seen for potstickers are fried first on the bottom and then the water is added to steam them. Honestly, Daddy Lau's method makes way more sense (almost kind of like a reverse sear).
Both technics are equally valid, actually. In Taiwan, they brown it first, then add the water on the sizzling hot pan, so that the steam shoots up instantly before covering it. Then when it's almost ready, they open it up, and let the water evaporate for one last bit of searing.
In Japan, this is called Yaki-gyoza (焼き餃子) which is a Chinese-Japanese dish which is popular after Second World War. Well, I love you put Traditional Chinese Subtitles on this video. Love this.......

WOW. Just WOW. I love potstickers more than pretty much anything. I’ve always been afraid to make them on my own. I decided to try this (however subbed minced pork for the chicken) and it came out INCREDIBLE. There is NO comparison to frozen store bought potsticker. What a fantastic recipe. Thank you so much!!! For vegetarian vision i used Tofu (Firm tofu dried from water and then crumble it into really small pieces) I also add couple extra table spoon of All purpose flour and an egg they help buying the tofu to the veggie, and season my tofu a bit. I fallow the Sifu Law recipes. ( sub the oysters sauce with vegetarian version) it came out amazing, how i got good recipes for vegetarian potstickers. Thank you Sifu Law !
My wife has celiac so I tried making my own gluten free potstickers once using home made dough/wrapper. They turned out ok, but seeing this made me want to try again
I fold mine like Daddy Lau's, though my aunts do Mommy Lau's method. My potstickers typically are filled with ground pork (I ground myself at 80/20 from pork butt), ginger, and occasionally chives and napa cabbage if I can sneak them in from my kids. Though my cooking method is a little different; I dry fry them in oil till the bottoms start to brown, then I add in water and quickly close the lid to seal for 3mins. I don't flip them, I maintain a crispy bottom but a tender top. I wouldn't mind doing a skirt on them one day.
I just realized that batagor, an Indonesian fried food, is actually a dumpling too after Mommy Lau did the 4 corner fold. Here I am watching dozens of dumpling recipe, yet I missed the one very close to home lol
I am blown away by your dad's skilled use of the clever. I am partially qualified as a professional Chef. My knife technique is pretty good. But I can not work a Clever like that. One other thing that is wonderfully Coincidence is your dad's finger and hand placement. It's Identical to how (Most) Professional western Chefs use their knives. i.e. Indexfinger running down the back of the knife for guidance. and his other hand guiding the side of the knife with the flat side of his fingers between knuckles. This is very difficult to get used to at first. they used to teach us this technique in trade school (Apprentice Chef School). I found it do hard at first. But 30 years on and It's easy and so much safer. My wife does not do it and she is always cutting herself. Thank you, Daddy Lau. I love the expertise and the experience that you share with your videos. I am going to see just how sharp I can get my Clever (Sharper is actually safer people) and see if I can learn to use a Clever the way I use a Standard Chefs/Kitchen Knife.

Honestly I love this channel. Thank you so much for sharing your family recipes and culture with us. I make your dads tomato tofu soup once a week and it’s one of our family favourites now. Forever grateful.
Have you ever experienced your ground pork filling smelling and tasting subtly rancid the next day? I grind my own pork from shoulder and add all ingredients the night before. Meat smells fine and I even microwave a little bit and it tastes fine too. The next day it smells and tastes funky and is inedible to me. What’s going on here? I usually add the following to my filling : soy sauce, sherry, sesame oil, ginger, garlic, scallions, cabbage, sugar, white pepper, corn starch, baking soda. Thanks in advance!

I was intimidated that they were too hard to make, but as usual, Daddy Lau makes everything look so easy. I still am just blown away all the time by his amazing chopping skills. So fast and every slice he cuts is the same size. Wow!

My mum recently passed away and she always made wontons and dumplings etc. but I never got round to learning from her. I’ll be trying my hand at these, I hope she’ll be proud of me.

WOW. Just WOW. I love potstickers more than pretty much anything. I’ve always been afraid to make them on my own. I decided to try this (however subbed minced pork for the chicken) and it came out INCREDIBLE. There is NO comparison to frozen store bought potsticker. What a fantastic recipe. Thank you so much!!!

For vegetarian vision i used Tofu (Firm tofu dried from water and then crumble it into really small pieces) I also add couple extra table spoon of All purpose flour and an egg they help buying the tofu to the veggie, and season my tofu a bit. I fallow the Sifu Law recipes. ( sub the oysters sauce with vegetarian version) it came out amazing, how i got good recipes for vegetarian potstickers. Thank you Sifu Law !

My wife has celiac so I tried making my own gluten free potstickers once using home made dough/wrapper. They turned out ok, but seeing this made me want to try again

I fold mine like Daddy Lau's, though my aunts do Mommy Lau's method. My potstickers typically are filled with ground pork (I ground myself at 80/20 from pork butt), ginger, and occasionally chives and napa cabbage if I can sneak them in from my kids. Though my cooking method is a little different; I dry fry them in oil till the bottoms start to brown, then I add in water and quickly close the lid to seal for 3mins. I don't flip them, I maintain a crispy bottom but a tender top. I wouldn't mind doing a skirt on them one day.
I just realized that batagor, an Indonesian fried food, is actually a dumpling too after Mommy Lau did the 4 corner fold. Here I am watching dozens of dumpling recipe, yet I missed the one very close to home lol
I am blown away by your dad's skilled use of the clever. I am partially qualified as a professional Chef. My knife technique is pretty good. But I can not work a Clever like that. One other thing that is wonderfully Coincidence is your dad's finger and hand placement. It's Identical to how (Most) Professional western Chefs use their knives. i.e. Indexfinger running down the back of the knife for guidance. and his other hand guiding the side of the knife with the flat side of his fingers between knuckles. This is very difficult to get used to at first. they used to teach us this technique in trade school (Apprentice Chef School). I found it do hard at first. But 30 years on and It's easy and so much safer. My wife does not do it and she is always cutting herself. Thank you, Daddy Lau. I love the expertise and the experience that you share with your videos. I am going to see just how sharp I can get my Clever (Sharper is actually safer people) and see if I can learn to use a Clever the way I use a Standard Chefs/Kitchen Knife.

Have you ever experienced your ground pork filling smelling and tasting subtly rancid the next day? I grind my own pork from shoulder and add all ingredients the night before. Meat smells fine and I even microwave a little bit and it tastes fine too. The next day it smells and tastes funky and is inedible to me. What’s going on here? I usually add the following to my filling : soy sauce, sherry, sesame oil, ginger, garlic, scallions, cabbage, sugar, white pepper, corn starch, baking soda. Thanks in advance!

oooohhhh! thank you so much for the potstickers recipe! I love those but never knew how to make them. I was intimidated that they were too hard to make, but as usual, Daddy Lau makes everything look so easy. I still am just blown away all the time by his amazing chopping skills. So fast and every slice he cuts is the same size. Wow!
