I would change only one thing and that is I would cool my water/sugar/coffee solution before adding the vodka. The heat can cause the alcohol to evaporate.

Sometimes I use flavored vodka ...it adds a new element of flavor and people really like it! But I don't add the vodka until the very end! I let the pot cool for a bit then add it! I also use a combo of sugar and corn syrup. I get the Gordon Food Service corn syrup because it has an almost buttery flavor to it.

I'm a diabetic too! But even id truvia works instead of sugar, you can't drink alcohol either!! so, damn if you do, damn if you don't! you are gonna have to settle for mineral water, coffee or tea with Equal or sweet'n low !! :)

To your flavor preference. This is a large batch, so if you follow the proportions given in the video, I'd guess at least a tablespoon of extract. Add some (maybe 1 tsp, or a half Tbsp), taste mixture, add more if desired, taste again. The flavor might be slightly richer with whole bean infusion, but seriously, just use extract if you don't want to wait a month or more. It will taste just as good and is much less expensive than buying whole vanilla beans! (Or vanilla paste.) 😌
Donna Burbo I found my Vanilla Bean is our local groceries store. Maybe a health food store may have some or if you have speciality stores... Hope you can find some Vanilla Beans

Whether you make it with rum or vodka make sure it's more than 100 proof. I make it with Cruzan 151 proof because Bacardi quit making 151 proof. As far as vodka is concerned, I wouldn't recommend it for making Kahlua. It's fine if you're making Cafe Rica. In that case I would recommend Smirnoff blue label 100 proof.

Also, regarding some folks commenting that rum should be used...it doesn't matter if some other recipes stipulate rum... this is a coffee liqueur & you have accomplished an end product that includes coffee flavor, alcohol content, sweetening, & from what I can tell, incredible taste! I did it and used Nescafe, we'll see how it tastes in a month. One other question tho...Is there a final step? I think I need to strain the Kahlua to get all the vanilla bean pieces/chunks out because I think there were some particles of that as well. Did anyone else feel a need to do that?

I did have one, quite a bit like it, in my previous life (marriage) but I got rid of it, because it was a pain to keep clean. I have a smooth top electric now. If you really want to taste the vanilla in your recipe, increase the amount to 2 tablespoons of vanilla extract. Since vanilla beans average around 6 inches in length, this amounts to 1 to 2 teaspoons of extract per inch of bean.) I hope this helps you. this recipe is straight forward, it makes sense etc. The only problem is adding the alcohol to a hot medium, because it evaporates! as it is suggested down below, wait until it cools, add the vodka, forget the vanilla beans, use a good vanilla extract and drink it right away! thanks!

Tried this way and pretty good though the real thing uses Arabica coffee and rum so taste not exact. Used potato vodka second batch for no headaches afterward.
Have you ever made this with Rum? I’ve never liked Vodka, it smells like rubbing alcohol and I hate that smell. Just follow your regular recipe but instead of the vodka add a fifth of the rum or spiced rum which I like and it definitely makes a difference Alicia as far as I can tail shall give it a try see what you think. Was the vodka 750ml? That looks like a 1.14L bottle. 750ml is a fifth

this recipe is straight forward, it makes sense etc. The only problem is adding the alcohol to a hot medium, because it evaporates!
as it is suggested down below, wait until it cools, add the vodka, forget the vanilla beans, use a good vanilla extract and drink it right away!

THAT bottle is a fifth ? (does fifth mean 757 ml like google told me?) Looks more like 1000 ml....

Rum is in Kahlua, I would substitute it for vodka.

Tried this way and pretty good though the real thing uses Arabica coffee and rum so taste not exact. Used potato vodka second batch for no headaches afterward.

You can see the alcohol in that vodka go up in steam... You should've let the syrup cool down before adding the alcohol.

Have you ever made this with Rum? I’ve never liked Vodka, it smells like rubbing alcohol and I hate that smell. Just follow your regular recipe but instead of the vodka add a fifth of the rum or spiced rum which I like and it definitely makes a difference Alicia as far as I can tail shall give it a try see what you think. You should let it cool down before you add the alcohol. That heat will cause the alcohol to evaporate.

The heat burns off the alcohol. I would have let the mixture cool before adding the vodka. The vanilla should have been added before the vodka.
