Lately, yellow cherry tomato (sun gold). Cook them down, clove of minced garlic, stick blender. Barely second best to plum tomatoes and highly underrated
I love that the secret to all of them is ... there's no secret! Keep it SIMPLE. For years I tried to make a good tomato sauce for pizza - cooking it out, adding dried oregano and basil, garlic .... never got one I was happy with. Then I made yours - squished tomatoes, bit of fresh basil, drop of oil and salt.... and it was AMAZING. The sauce I had been searching for.
That only works if you have great and fresh ingredients. If your tomatoes are watery, too acidic and not sweet enough, the sauce will very likely be much better if you cook it down, and sweeten it a little.
Hi 81 yr old beginner at making Pizzas. I am going to try all your recipes and under stand what they taste like. I love your videos! 😊 I think you are the best of all the pizza makers on You Tube! Your presentations are like ‘I’ am standing in your kitchen and seeing your lovely little girl checking everything out! Sid in Arlington, Wa. About 60 miles north of Seattle. 😊
Vito, your pizza channel is the best. I watched your channel for just a few weeks and now my family will never eat take out pizza anymore but they like to help make the pizza. Thanks for making food more fun and making it more a family event. We all help to make the pizza.
Hello Vito! Nice to see you so healthy and fit. I hope your family is feeling better too. Please stay healthy and always take enough time to recover mentally and physically. Nothing is more precious to you than the health of you and your loved ones!
We tried the pea sauce tonight. It's not a traditional pizza, but it's very good. We will definitely be using this sauce again. We have a family member with acid reflex, and this is a great option. Now that we know what it tastes like, we can become creative with the complementary toppings. Thank you, Mr. Vito!
Welcome back Vito! Glad you are recovered. Thanks for showing how to make these sauces. Now I can up my pizza game. Two comments. One, unless I can get vine ripened tomatoes, I think canned San Marzano tomatoes have better flavor than what I can get fresh at the supermarket. And two, those are habanero peppers, not ghost peppers you're using for the sauce. Ghost peppers are redder, slightly bumpy and have a little tail at the end. They're also many times hotter than habanero and would make a sauce that's pretty hard to eat.
This is true, but even with Habanero's being a lot less spicy than Ghost Peppers. This sauce will still be way WAY too spicy for most people. Habanero's even without seeds are lethal, he used the seeds here. Most people would take 1 bite of this and be forced to tap out.
Vito I have to thank you for making me appreciate pizza even more than I did before, you’ve taught me a lot about the dough, the hydration, cooking process and everything involved in this art, I wish the best for you and for your family, much love
Thank you Vito! The sauces inspire me to get some awesome pizzas in the pizza oven. Good to see your back and we'll again. God bless your family. Scott F.
I just stumbled across your channel and I can't stop watching. This is some of the most authentic Italian I've seen on RUclips. I really enjoy watching and listening to you talk and your daughter is super cute she has made me laugh in a couple of videos hahaha keep doing what you are doing!
Those peppers are not ghost peppers but orange habanero's by the way. Love your pizza dough, tried a lot of others but the one you did is just perfect!
Well that explains why it’s edible. I was wondering who could eat an entire pizza or ghost peppers which are 1,000,000 scoville units. habanros are 2,500-8000. Does sound good though a hot sauce base
Just saw this video...not sure if you'll read these older videos. But... This summer I got into fermenting hot sauces. The last one I did was Chili Lime. I basically took all the leftovers in the garden: green tomatoes (San Marzano, Celebrity, Cherokee Purple) all the green peppers (Cayenne, Poblano, habanero, and Peri Perri (like a Thai Chili). Added garlic from the garden, onion, and some peeled limes...chopped everything up and added it to a salt water brine. Let it ferment for 3 weeks then blended it up and strained it...and had green chili lime hot sauce. Turned out really good! I think you could do a similar thing and NOT strain it to make a chili lime pizza sauce. You should be able to do it without fermenting it...maybe just use lime juice. But, I would challenge you to do this and see how it turns out. If you can't find green tomatoes, just use red peppers (fresnos!) and tomatoes . In fact, you may be able to take your red sauce, add maybe 4 fresno peppers and juice of a couple limes, more olive oil, and put it in the blender. I think it would be GREAT on a pizza with BBQ'd chicken, shrimp or any sea food, or just a veggie pizza. Do it! I'd love to see it! Wish I could tag you, but not sure how! @vitoiacopelli
So thankful that you and your family are now better and past this covid...and stronger than before. Thank you for all the recipes and I can't wait to try them. God bless you and your family with good health and safety always. Thank you again.

Great to see you back Vito smiling and giving us Pizza joy. I can’t wait to have ago at making these fab sauces I’m so pleased you did a follow up on them. Looking forward to your next video you are getting rather addictive to watch like making pizzas 🍕
Before finding your channel: Omg it takes so many hours to make pizza.. After finding your channel: Omg making pizza is the highlight of the day, its pure love 😍
Wouldn’t the ghost pepper sauce be INSANELY hot?!? 🤯 I thought it was going to get mixed with the tomatoes he was cooking 😂😂 and when the two weren’t combined my mouth was already burning.
Insanely hot? The peppers he is using looks like habaneros and if it is, it will be INSANELY hot. But if you are going to make this sause using ghost peppers, it will kill you.
Alright! The Maestro is BACK! 💪 The purple potato (blue sauce), peas sauce, and ghost pepper sauce are totally new for me. I can't wait to make them for myself and to try them out! Grazie, Maestro! Oh, Maestro, have you ever seen a recipe for purple potato soup? There's an awesome version by a nutritionist Whitney Cole (from Fitness+Fuel), which retains the purple potatoes' deep, rich purple color. Also, I think the soupy texture would be an amazing alternative, if you would prefer to sprinkle the Pecorino cheese, after the sauce has been spooned onto the pizza dough. I hope you get to try it out!
Right yesterday our local store was out of canned tomatoes and we made our own sauce from fresh tomatoes. Then this video appeared to show how it is done. 😀
I love your content, and love your dough recipe. But have you ever thought about explaining the differences between it and other styles like New York, St Louis cracker crust, or Chicago deep dish doughs?
Hey VIto have you thought about adding pesto and/or asparagus to your green sauce recipe? One of the best sauces I ever had on top of salmon was an asparagus/pea combo sauce that was drizzled on top t
Thanks God you and your family are ok . I like all. And im going to make and try the 5 sauces for the 🍕. My family loves pizza 🍕. Thanks for your time.
I am definitely going to try the one with the peas! Thanks Vito I have studied your videos , use your poolish recipe and made thousands of home pizzas in my Ooni because of you.
Glad to see you back. I am going to try the Purple potato sauce because I have fresh purple potatoes out of my garden. The pea sauce looks cool as well. I'll give it a try. Thanks for the interesting new ways. Feeding wood into the wood fired oven now.

Vito is Back 😎👍 Ghost Pepper Sauce... very interesting Stuff 😎 this will be hot and burning at the same Time 😂👍Vito bro, I'm really looking forward to the sauces video and I'm happy to see you in the best of health again 😉👍 best greetz from Germany 😎🍻
Believe it or not, my favorite store bought pizza sauce is not "pizza sauce." For whatever reason, most store-bought pizza sauces don't have that pizzeria taste. Instead, I use DeLallo Tomato Basil Pasta Sauce. It has lots of basil and Italian herbs, and the consistency is pretty good. You will see some small tomato chunks in this sauce. The "plain" Marinara sauce can be used, but the Tomato Basil is seasoned perfectly. That said, I am going to try this basic tomato sauce recipe!
Thank you very much Vito for sharing your experience. By the way, the ghost pepper sauce, isn't it too hot to eat, looks as pretty much peppers for me.?
What's your favorite sauce for your pizza?

I make pizza with caramelized onions, diced tomatoes, salt, basil, Swiss cheese and dry parmesan.
Pesto, mushrooms cream or zucchini & basil sauce !

Ninja blender is the best blender ever! It is my favorite blender, especially when I need to blend hot pepper sauce. I love it!
Your tomato sauce for pizza is so simple and delicious I would never make it any other way my friend! I can’t wait to see the other sauces
I would! 😁

Thanks Vito! Greetings from Germany! You are the best!!!! 🥰🥰
Ghost pepper sauce hands down. Thank you sooooo much for sharing the recipe.
I want to try the white sauce! I hope you and your family have recovered well from the COVID!! God bless!
I still favor the Tomato but also with a little pesto mixed in, Thank you Vito!

I was looking for this comment 😂
The Habenero sauce should get cut with some cream and way more cheese and only add about 1/4 of the peppers from the blender
I think maybe to cut down on the heat. You should just use Orange bell peppers that that have the same colour.
I mixed it with yellow tomatoes and it turned lovely and not too hot but still quiet spicy haha
Thanks Vito for the video..glad you are all feeling better!
Thank you too! FOR YOUR SUPPORT
Chef Vito very good thanks for you .
