- In this video tutorial, I will share with you my own pizza sauce recipe! When preparing the pizza sauce, topping is very important, so in this video, you will discover one of the main secrets of Pizzeria Lo Sbrano. And that's the pizza sauce recipe. Obviously, everyone can have their own way of seasoning pizzas, maybe some people will prefer just the pureed San Marzano peeled pulp, to be seasoned at the moment on the pizza, instead, I would like to tell you about my topping: a sauce made with fine tomatoes sauce, but seasoned and flavored also with oregano, salt, garlic, sugar, and olive oil. Obviously, of all these ingredients I only add a little, which is just enough to make the sauce a little more flavor-full. You can prepare this sauce several hours before and let it rest for a while in the fridge, with a clove of hall garlic inside the pizza sauce or, if time is short, you can prepare it on the spot and use it immediately. With the doses of this sauce, you can season 3-4 pizzas, depending on the amount of sauce used and the size of the pizza.

260 g sauce
2-3 g salt
.5g sugar
5 g olive oil
1 tsp oregano
1/3 clove of garlic
mix it up
refrigerate for 2 hours before topping.

I put a tiny bit of anchovy paste in mine and cook it with a half of an onion iwhich, I remove at the end. What is the reason to not pre-cook it? I've tried both ways, and when you simmer it down for even 15 mins, I feel the sauce develops better, excess moisture is removed, and the garlic flavour is better infused.
Not cooking gives it a "fresher" tomato flavor. Cooking moves it more towards a pasta sauce.

Is this really your pizza sauce recipe? its the most generic sauce tho.. tomatoe salt sugar. oil and clove of garlic isnt original.
Only a few people get to understand what a Pizza should be! Now answer me this: If you make a powerful sauce, would you still feel the Mozzarella, the dough, and the other ingredients which by the way are unique in their own way??? I'm sorry to say this, but we should feel all the ingredients and find the right balance when making a Pizza. This is what makes the difference between a Pizza Chef and a RUclipsr! Start from the basics and master your skill. Do you really think that I could not place millions of other ingredients into a sauce? But you will always find that the closest to simplicity you get the better your Pizza will come out.
