I feel like a foldable headset would be more fitting for the steam deck than ear buds. Sure it takes more space but you feel more isolated so it's just best for immersion, especially if you're on a flight (got this impression with the nintendo switch), also, if you prefer headset over earphones, just use a headset instead of earbuds. It may sound stupid to precise it, but I felt it could be a good idea to do so.
My solution for Bluetooth earbuds was the Creative BT-W4 adapter. It's a little USB-C Bluetooth adapter that converts the USB audio out to Bluetooth and in particular has support for the AptX Adaptive codec. With a pair of earbuds that also support AptX Adaptive the latency is pretty much undetectable. The dongle is small enough to fit in the little carry pouch in my Tomtoc case.
I hate to pull the "Works on my machine" card, but I've never really had an issue with bluetooth latency on much devices for a long time, maybe theres a 0.2-0.5 milisecond of lag but I don't think it would be an issue unless your playing a competitive FPS.
I find the discord app doesn't detect the mic in my soundcore life p3's or the deck's built in mic. Not sure if I can fully replace my pc with the deck (Since I cant run Destiny 2 on the deck without risking an account ban)...
You forgot the most important step...... first you need to buy steam deck
Remember the read/write is way slower on an SD card vs your SSD

Hall effect joystick is great but i have the limited edition oled and want to keep the original sticks guess i gotta learn how to solder after all.

Rhythm games on Bluetooth suck ☠️ but other games I haven't had much of an issue with latency.

I believe you need to set up additional stuff to use discord in game mode. More research will be needed though.
