Thank you so much for this recipe I grow Naga chillies here in Scotland and was looking for authentic dishes ❤ I have become addicted to the recipe although I add a tin of bamboo shoots I make it at least once week delicious 😋 I also have a large szechuan pepper tree in a pot, the smell and flavour of this style of 'curry' is so very different from what we think of or know as 'Indian/Bangladeshi' style curries people in Britain are familiar too. I'm looking forward to making other dishes from Nagaland a very distinctive and tasty cuisine.

Is the flame to be low or high? So the process is 5 mins for raw stirring, again 20 minutes with water (how much?), then 20 mins with chilly paste and half glass water, and next garlic plus ginger and last 5 minutes with chilly powder. Am a poor cook cos the my timing is always bad. Pliz reply.
@ground sky Step-1: stir fry pork for 5 minutes on a medium flame till it starts to sizzle Step-2: add approximately 300 ml of hot water & cook for 20 minutes till meat become tender on a medium flame (in between you can add pounded chilli) Step-3: once the pork become tender add 120 ml/half glass of hot water & tomato as well and cook for about 15 minutes on a low flame Step-4: add pounded ginger-garlic & sichuan pepper and cook for 5 minutes, once it’s starts to sizzle add chilli powder and stir fry for 5 minutes till golden brown Thanks for asking. For stir frying you should have taken a wider mouth vessel,you can hardly stir it forget frying...you are struggling. Next time take a wider neck utensil...recipe is good
