I use eagle claw circle sea circle hooks all the time and I fish catfish tournaments on Santee cooper and have won 2 lately for the club and other tournaments

But blood knots are for mating line, not for lures and hooks, so clinch or improved clinch.

Actually, it looked like he was tying what's called a BLOOD KNOT. I may be wrong. I have only been tying them for 31 years. ;-)
