Have tried increasing the print and cut size, upon trying to cut the maker 3 detects the mat size as 12x12 and does not allow to cut

I use 12x24 Cardstock from Cricut and just cut it down to Tabloid and A3 sizes

Its always a good idea to recalibrate before any print then cut update and yes it is recommended this time too.

What is the largest size print then cut on an 8.5x11 page? Did it increase or is it still the 6.75x9.25?

8.5x11 has not changed. If your printer is for 8.5w materials you should be able to print legal size also.
