I made these today and oh my gosh they're so yummy! The only thing I did different is I used xylitol instead of erythritol, only because erythritol doesn't agree with me very well. Thank you for this recipe! I'm becoming quite the baker because of you! 😊❤️

Thank you Michele! I guess it should work but I haven’t tried it with pure almond flour. Coconut flour helps to balance the moisture especially with the amount of eggs we used plus the moisture of pumpkin purée.
Why did you use coconut flour? Was it to soak up the extra moisture from the pumpkins? I been trying to use the huge bag I got but the flavor and texture is what bothers me.
Hi Liana, yes I have to use more almond flour to make up for the moisture. And it will also increase the carbs as I have to use 2 or more cups of almond flour for the base. I did use almond flour for the crumble part because coconut flour browns (burns actually!😂) a lot faster compare to almond flour. I don’t like to bother putting an aluminum foil on top of the cake in the middle of baking. 😅

ketoserts do they have powdered type and classic white and brown ? I just really want to use the monk fruit.. it tastes exactly like sugar to me.. I have a cup of the classic white I ordered on amazon but I need more than that to make this.. I’d like to get it closer and larger quality.. I’ll check my local Costco .. @@jadebell550 I don't know if the Lakanto comes in powdered or brown, I bought the granulated from Costco as well. However, you can easily make powdered out of granulated by grinding in a blender until powdered. For "brown" you can add a touch of molasses, which is how they make brown sugar anyway - by adding a little molasses to white sugar. Yes, it'd add a small amount of carbs but it would be negligible.

Is there a way to replace the erythritol? In large amounts like that, it can not only cause anxiety but also kill off your good gut bacteria. The recipe looks amazing and I would love to try something with less sweetener. Thank you!
I just made this - carefully and methodically- took me an hour and at the end I made a YUGE mistake!! I put ALL the pumpkin mix in the pan and began topping it with the filling, ugh! Too late. I put the crumbs on top and it's in the oven now. I'm praying it does not fall apart 😜🤪
Made this today and it was delicious!! But my the pumpkin layers are so moist and almost soggy, especially the bottom. It seemed really undercooked so I gave it an extra 10 minutes too and it didn't help. If you have any pointers that might help I'd be very appreciative 🙂
Aww.. sorry about that Michaela. I suggest you can more coconut flour (around 1 tablespoon) I guess it depends on the brand of coconut flour you’re using. Hope it helps.❤️
Hi Eric! I haven’t tried it this recipe as cupcakes but you can give it a try and just bake them at 300° and just check it from time to time after the 20 minute mark.
